  • Can't remember where I saw it but the cook made mashed potato then heaped it into a pile, made a couple of holes in the pile and cracked an egg into each of them. They were then covered over and left to sit for a while. The heat from the mash poached the eggs but left the yolks runny. Sounds yummy to me. I might just try that to see if it works.

  • Would need to buy potatoes first. :o Was thinking some more about it - I think the pile of mash was covered with tin foil to help retain the heat.

    Will try it when I have bought some tatties and will let you know how I get on.

    Slice the potatoes into rings and leave in water.

    Mix plain flour and water into a thick batter. You can use the chick pea flour from Asian shops - if you have it.

    Dry the potato slices and put them in the batter - it may only take a few at a time.

    Heat some cheap oil in a pan, when it is hot carefully put batter covered slices in. It doesn't have to be deep, an inch and a half will do. Turn over when brown underneath.

    When the potatoes are all cooked, if you have some batter left put that in. It cooks very quickly and tastes like the 'bits' we had with chips and peas back in the 60's.

    As they are cooked, while you do the next batch I put mine in the oven in a dish with crumpled foil (good way to re-use foil) as they stay hot and crisp.

    Serve with a fried egg

    Make plenty - people will eat mounds of them

    It also is fab with onion slices.
  • When I was small and it was a Monday (the night before family allowance was paid) we got fritters (as above though just plain flour and water batter) and an egg, wait for it, done in the chip pan!!! It's the weirdest egg but always felt far more substantial than just a fried egg. it puffs up and it's magic!

    OOOOH, reminds me of my friend's mum's night before family allowance dinner...... Mashed potatoes with fried onion in bisto......... another beauty.
