To answer your question, if it's a mistake by the garage you are very likely to get it back. If it's your mistake, then very unlikely.
I am interested in how you paid for the car - you went to an ATM machine? Don't get it, as an ATM wouldn't let you withdraw £7000 and mine certainly can't do faster payment transfers or issue bank cheques.0 -

When you agreed to buy the car (and before you took delivery), you paid a deposit of £201. The dealership must have given you some paperwork at that stage detailing the contract that you had entered into with them. The paperwork should clearly show what you had agreed to buy (including any extras, such as Scotch Guard); any discounts offered; the agreed total price; the deposit paid, and the balance to be paid on collection. The road tax (VED) may well have been an additional charge over and above the agreed price for the car, but even so it should have been mentioned on the contract paperwork. The dealership should really have given you the petrol for nothing, if you bought a new car from them.
One common extra when buying a new car is the OTR (On The Road) charge, which covers things like preparation, road tax, number plates, etc.. However, as your car was pre-registered, you shouldn't incur this charge, other than the £30 road tax. Even so, any OTR charge should also be shown on the contract paperwork.
You say your invoice total was £7,201 and you paid £201 deposit, plus £7,310 balance, giving a total of £7,511. If all those facts are correct, then the dealership has overcharged you. It might be a mistake, or they might be trying it on
If the dealership has made a mistake, then obviously they must reimburse you immediately.
If the dealership has supplied some extra that you didn't agree to, then you can insist they remove that extra and reimburse you (or, if you subsequently decide you would like to keep the extra, negotiate a big discount instead).
If there was some misunderstanding, then the outcome will depend on whether the misunderstanding was yours or theirs. I guess in such circumstances you would need to negotiate a settlement that satisfies both parties.
Was it a Main Dealer you purchased your car from?
Please post back what the dealer says the spurious £310 charge was for after you have spoken to them on Monday.

The paperwork I have when I ordered the car had the scotch guard, tax and petrol added, it came to £7201, he said if I paid a deposit of £201 it would leave a straight £7000 to pay on the day. My paperwork says at the bottom "final payment due £7201" and stapled onto that is the receipt for the £201.
It's from a large main dealers, I have emailed the salesman, it may well be his day off, I don't know, I'm giving him until Monday to give me an answer, then I'll go back to the dealers and sort it out.0 -
I'd just go in on Monday and sort it out yourself rather than wait for them to get back to you.0

Sorry "took me to a card machine" conjured up images of them driving you to a bank. Let us know how you get on on Monday - perhaps start by getting them to print a copy of a fully itemised invoice...0
