Living out of my store cupboard & freezer, how little can I spend to feed my family?

Hi Missy

I used up the chicken and broccoli and ended up having chicken lemon broccoli. Was lovely! Chucked in some extra veggies that were going bendy. Served it with the last of the rice noodles.
I have some diced beef that i want to use up tomorrow, so will hunt on Pinterest for a recipe for that.0 -

I took 2 portions of beef curry out of the freezer so they are ticked off the list, and I added peppers, onions , and tomatoes from the fridge that were going a bit soft.
I`m still proud of myself for going shopping yesterday and spending less than half what I normally do, and there`s room for improvement!
So glad you started this thread, missymoo, it`s a real motivator!:T0 -
Wanttobese and gizwal, well done! Sounds like you are doing an amazing job. I have just found some crackers and have used up some old bits of cheese on top! Quite nice actually. I'm sitting here watching Mary berry, I do love food!0

Our oven has broken (again:mad:). We have insurance, so will be calling them out after BH weekend, so we had a SC, a hostess trolley, hob and an electric steamer to cook dinner.missymoo81 wrote: »Hey everyone, how has everyone done with their Easter dinners? I had bought ready made roast potatoes and yorkshire puddings yesterday in anticipation of this. Gammon joint went into slow cooker this morning, served with mash, carrots leeks and (frozen) mixed veg. Roasties went into hostess trolley as an 'experiment' where they cooked but didn't brown, so I took them out and put them in the frying pan, didn't add any oil as they are already coated in them and sure enough they browned. The yorkshires I took from the freezer so they were already defrosted when I also put them in the bottom section of hostess trolley.
I also finished off the last half of a bottle of wine. This was to de-clutter in anticipation of the recycling men calling.
Oh and going through some of DS cookery class ingrediants, we used the bicarb to clean the George Foreman.0 -
I used up 3 portions of rice which had been previously frozen and turned it into egg fried rice and the cooked some portions of Chinese chicken to go with it - it was lush and used up some bits from the freezer which I probably would have thrown away 0

Wow, you did a great job considering you were oven-less too! :T0 -
As it is Easter Sunday we had a leg of lamb that has been in the freezer since Christmas, plus HG runner beans from last year's harvest, roasted parsnips, roasted carrots, roast potatoes and y pud. I also made a pavlova with raspberries from last year 's harvestI have enough lamb left over for another meal so it has been covered with gravy and popped into the freezer
Tomorrow we are having Gammon, with salad, mashed potatoes and pickles. Again I bought it at Christmas, it is large so it will stretch to sandwiches on Tuesday thanks to my trusty slicer, plus a bacon and onion pudding for Tuesday and I will have enough left to make a bacon pasta for Wednesday and Thursday
a Bacon and Egg pie, Friday will be HM tuna fishcakes with chips using a couple of tins from the cupboard.Blessed are the cracked for they are the ones that let in the light

I fell of the wagon and sent my DS to KFC. Bad Bad Mila!!! (hangs head and goes to the back of the classroom):(
Ok, at least I confessed and now have a clear conscience. So onward and upward. :A
Tomorrow I'm making a Vietnamese soup with my yummy beef broth that was cooking all night in the SC.
Lots of veggies both canned and fresh-- plus noodles, garlic, green onion and grated ginger. I have some leftover steak that will be thinly sliced and mixed in at the last moment just to heat it through...I'm making myself hungry.

Don't think we'll be venturing outside today, not sure what I'll be cooking, but it will be store cupboard stuffs. Do need to make some more biscuits!0 -
