eggs - best to keep in the fridge?

    I've always kept my eggs in the fridge, just on a shelf in the box they come in.
    I always use them straight from the fridge as well, for making cakes etc and my cakes always turn out nice :)

    Totally amazed by the fact they can last for 7 months if covered in oil :eek:

    I'm guessing its cos of the slim chance of salmonella in eggs that they should be kept in the fridge.

    I have a wooden egg rack DS1 made in school many years ago and eggs are kept in that. On the odd occasion I've bought lots I've put the surplus in the fridge and then promptly forgotten they were there! I really have had to discard several from the fridge due to being weeks past their sell-by date!

    Think twice before spending anything!

    The reason you're told to put your eggs in the fridge is because the temperature is constant there. They're not refrigerated at the supermarket because they're kept at a regular temperature there - no matter when you go the temperature's pretty much the same, not fluctuating all over the place (climate control I guess). If you keep them on your shelf at home, you may get the sun shining on them, the kitchen gets warm etc, then at night they cool down. That's what causes problems, if I've understood our local health inspector correctly.....

    very confused after thinking about it because it has always just been habit to put in fridge but people used to have those ceramic hen things to put eggs into!!!!!!!!!

    No, they are kept on the shelves in the supermarkets at room temperature, and I have always kept mine in my utility room. It obviously makes sense not to keep them somewhere too warm, but I don't think that there is any need to keep them in the fridge.

    No, I never do - I have a basketful a week sat on the sideboard - theyd never fit in for a start lol

    I never keep my eggs in the fridge, fortunately we have a pantry so as soon as I collect them from my chickens at the bottom of the garden they go straight in there!

    i keep mine in the larder which is cool (ish).
    Apparently if you keep them on window sill on a hot day they can cook / explode!

  • In a book I have on poultry keeping, it just says keep them in a cool place.
