What can I make with a glut of Stilton

We've been given 500g of Stilton from my mum's Xmas leftovers.
The use-by is this week but I'm happy to freeze portions.
We will have a bit with crackers but we aren't huge Stilton fans.
I'd appreciate some recipe ideas - thanks

Soup, sauces...lots of things. I'd freeze it and think about what you want to do with it. If you aren't fans but still want to consume it then freeze in small portions and use half as much as recommended in any recipe you find.:footie:

I am pretty sure Stilton will not do anything to you if you don't eat it all this week.
It has probably been maturing for months and would have no problems sitting in a fridge a while longer0 -

But I can take your broccoli and Stilton soup and up it: make a huge batch of broccoli soup and freeze into portions. Add (frozen) Stilton to taste once its reheated in a pan, the taste will be stronger.
Can also recommend the pear and walnut salad recommendation, its also handy to have some frozen in cubes to make a creamy blue dressing.Value-for-money-for-me-puhleeze!

Use it in homemade quiche - a shortcrust base covered with chopped sauteed leeks and sliced cooked potatoes, dotted with chunks of stilton then topped with beaten egg (perhaps with a little splosh of cream) and then baked.0

Jamie oliver (or some other celeb chef) made a really nice veg pasty - roasted cubes of celeriac & butternut squash with a lump of blue cheese wrapped in a blanched cabbage leaf and then made into a pasty with pastry ... I don't like blue cheese but this was lovely!wading through the treacle of life!

I'm sure it would but the taste may get stronger & it will take me forever to get through it! It will last even longer frozen!
Not too keen on soup but will make some. Loving the pear, walnut & Stilton salad idea0 -
We make a mushroom and stilton risotto. Just makes it really nice and creamy and not too overpowering. And Risotto is so easy to make and warming during winter. Throw it next to a bag of salad leaves to make it healthier.0

Apart from the usual uses i.e. soups, sauce, toppings for pies etc. cut into usable portions and freeze, it can be crumbly when defrosted but still okay to eat with crackers or cook with.Everything has its beauty but not everyone sees it.0
