    this is a nice recipe. I don't always use as much broccoli, use whatever greenish veg I have around and more of the suggested ones. It's strange, but it doesn't seem to matter what veg I use, it always tastes pretty much the same. We had too many courgettes due to bad fridge management, so used those. Took some of the skin off first though.

    As the OP said, use less cheese than the recipe says!

    My mum makes broccoli and stilton quiche.

    I'm not a fan of stilton, but it is slightly more bareable in a quiche :)

    Butternut squash, red onion and blue cheese risotto is lovely - I often make this recipe and it's really popular in our house. Squash, onion and blue cheese also makes a really nice pizza topping, like this, or a realy tasty filling for a quiche or tart.

    I also love chicken breasts stuffed with stilton and cranberry sauce, wrapped with bacon or pancetta.
