Closest thing to "civil partnership" for couple who are not same-sex.

I've never wanted to be married - not since I was 12 and I'm nearly 50 now! However my SO and I are now in the situation that we could really do with the legal and financial benefits of marriage.
We can't legally have a civil partnership in the UK (I'm female he is male) and we seemingly can't even do so abroad, or where we can it wouldn't be recognised here.

I'm investigating where we can get married (that will be legally recognised here) with the least rules about what we must say, and where there is not the inherent sexism of only the father's name/occupation being on the certificate. We are planning a trip to the US - Texas and Louisiana - for my 50th so I wondered if the laws there are different, but I'm struggling to find details of the legal requirements in terms of words and certificates.
