    it's just getting the balance right for us i dont know wether to ease the older kids into it slowly or just adapt them to this is what it is and there is nothing else...... am wondering if you really cant taste lentils when used to bulk out mince and which are the best ones and is value mince ok or do i need to buy the more expensive stuff . dd2 has just complained she is hungry she ate a chicken dinner(again left her veg) 1 hr ago so now i am wondering if it is just something for her to say she has refused an apple so cant be that hungry i suposse.

    how old is dd2?

    There have been a few threads on here on how to get kids to eat veg, one good way a la jamie oliver is get them involved in cooking it. Now im sure you dont want to be dealing with knives and the like, but wonder whether if you did sweetcorn fritters - she could stir the mix- ( just thawed frozen sweetcorn in a pancake-like batter, quick fry on both sides in a dorp of oil in a non stick pan- almost like a burger lol) she might try something like that?

    Ive never come across anyone who doesnt like these, adult child or animal :D

  • I always buy huge sacks of potatoes from our local farm shop, they cost about £6.50 - I keep them in the shed and they last for ages. You usually get a good variety of sizes, I use some for jacket potatoes and the rest are mashed, boiled or roasted. If I am making mashed potatoes I always cook at least twice as much as I need and freeze the rest. I also cook and mash the last few in the bag if they are likely to go off. Well worth it if your family like potatoes.

    dd2 is 13 and non movable when it comes to fruit or veg did get away once with making brownies with dried prunes in them tho but she was the only one who would eat them

    hi i have put this in the fan oven at 120 will this be low enough or does it need to go lower

    That should be fine i cook mine on about 140 but my oven isnt a fan oven.

    bulking out mince with grated carrot is another idea...especially if you have a proccessor as, hopefully your daughter shouldnt even notice they are there....;) .... if you get away with that you can do it with all sorts...courgettes etc...whatever is on offer.... i used to do this for my nephew and he didnt realise that it was in there until i told him:p ...

    How about corned beef hash?

    just cut some peeled potatoes and some chopped onions and put in a big pan (make loads as it is better still the day after:D ) bring water up about half way and cook - you can always add more water if need be,,,,when that about done -chop a tin of corned beef and add and throw in a tin of marrowfat/proccessed peas (including the liquid) and cook -without a lid on so the liquid reduces..when it is done it should be nice and thick... and you can serve it with dumplings, yorkies or even put a crust on it.... and extra veg for those that like it... i usually make mine with , carrots, swede and parsnips in too..but i was thinking of your daughter...so you can always serve extras...and id be amazed if anyone was hungry after that lot....:rotfl:

    or what about mashing some potatoes, and then mashing in a tin of corned beef then when it is cool, shape it into fishcake sizes-put in the fridge and then either shallow fry or bake in the oven... the kids would probably like them with some tomato ketchup mixed into the mix and the older ones would probably enjoy making them:T ..... and you could also make that into a pie:D

    I will get my thinking cap on and send some more recipes tommorrow...

    my oh eats very little veg (worse than the kids lol) but will happily eat things into which ive sneaked lentils - i buy the red ones and with a bit of cooking they just cook into the mince. personally i dont buy the cheapest mince as a lot of it is fat. grated carrot is also a good way of bulking out mince as it is a similar shape and you can "fool" kids its meat. i think the record was 1 small pack of mice to feed 10 hungry people.
