    One of my favourite ways to cook white fish is to put it in an loose 'envelope' of foil tightly closed, with white wine and some herbs and bake in the oven for about 40 mins. You must leave some room in the envelope for the steam to develop to cook the fish.

    Ah well, this is erm, because I haven't actually erm, seen what it is yet, it was a total "punt" !! I like the steamed idea, but I always tend to do that with fish. Hmmmm :)

    I shall probably as you say, revert to Google, but always good to have first hand recommendations!

    Okay - well if it's smoked then just gently reheat in some milk and serve with a poached egg.


    If it's not smoked you could do an Italian type dish - poached in tomatoes, basil and oregano or cover with a cheese sauce and bake.

    I do this tomato and fish dish with the addition of black olives. It's really delicious. The tomatoes etc works well with chicken thighs too. :cool:

    I was looking for a recipe I used to do but I can't find it, it was some tomatoes cut into quarters topped with fish fillets, then topped with Herby breadcrumbs mixed with feta and then baked. It was a really simple but tasty dish. You can add olives, roasted red peppers etc.
  • I'm almost identically matched with mummyroysof3 @ £392.12 / £532.
    I'll declare properly on 29th as that is month end for food budget. Shouldn't be much movement though.

    I'll prob spend £5 on fruit etc and a tesco delivery on 29th. Really tried to cut down but it's not happening argh

    That sounds so good. I quite like the idea of cheese with fish. One of my family favourites is with salmon; add a couple of dollops of sundried tomato paste to the salmon, put in oven in foil packets for until cooked, add goats cheese to the top and grill. Absolutely delish.
    I'm off the shops soon. My week ends on the 28th so, so far so good. We are off to center parcs for a few days and I have planned the menus for the week from out of my freezer. I'm hoping to come in under my projected budget.

    Shopping done this morning, coop tesc0 and fruit &veg market so £65.63 spent, have updated sig.

  • No more big spends on groceries but going through the budget yesterday DH did ask whether the £20 he had spent over the week on biscuits, pop and snacks counted... uh yes! Plus we treated ourselves to a few delicious beers from a local bottle shop, so total at the moment is £182.08. Leaves us with £37.92 until payday (Friday 29th) which is definitely doable. Tomorrow will be meal planning day!

    As my plans yesterday were interrupted by piddling rain, I drove the 6 miles to the nearest Lidl - I had read something in the evening paper while commuting home this week and checked their offers and it is Italian week so I went for a look. I had my frugal-ish hat on - that is, "Ooh, I like that, but do I need it or would it get used up?" and ended with the week's shop for £38.30 plus bought two packs each of pants and socks for DS (I glimpsed his at Christmas and as long as he does the one-in, one-out approach, this will help) all for £12.96. Quite impressed really. But for the drive, traffic and number of people, I might consider going more frequently. I will stick with the local shops for now - lovely butcher and a choice of two SM (Co-op and Morries) and it keeps the small Town shops alive. I might come in under this month at this rate. My month ends on Friday, when I get paid. Off to update my sig
