I try to vary things to avoid getting bored.
Wholemeal, granary rolls, bloomer bread etc.
My OH liked a nice bread e.g. mediterannean with some pât! or olive spread.
Does it have to be sandwiches or could you do pasta salad?
ETA: our family absolutely love corned beef & beetroot sarnis.YUM

I'm quite into wraps and pitta bread at the moment.
Roast veg such as peppers, onions, courgettes, mushrooms, tomatoes with a little grated cheese and some greek yoghourt. Add some chilli if you like.
Sweetcorn, diced onion and kidney beans (any other tinned beans will do other than baked), mayo and a dash of chilli with grated cheese.
