One way to ring the changes is to use different bread as often as you can.
Wholemeal, granary rolls, bloomer bread etc.
My OH liked a nice bread e.g. mediterannean with some pât! or olive spread.

Does it have to be sandwiches or could you do pasta salad?

ETA: our family absolutely love corned beef & beetroot sarnis.YUM
A tin of corned beef goes a long, long way - especially if you have a sharp knife.
  • Coronation Chicken (Lidl 75p, Tesco £1.25, identical) on the bottom slice of bread and mango chutney spread thinly on the top slice. Bring together, delicious. Even better on a baguette.

If you are looking for things low in fat and not processed, left over roast chicken is always good

DH's favourite is Mashed up avocado with a pinch of salt and squeeze of lemon, topped with sliced tomato and lettuce leaves.
Finally I'm an OAP and can travel free (in London at least!).
  • lightly toasted wholemeal pita bread split open then spread with hummus/cream cheese then filled with salad

lightly toasted wholemeal pita bread split open then filled with warm rice salad (rice mixed with peas/sweetcorn/smoked sausage

lightly toasted wholemeal pita bread split open then filled with homemade tabbouleh and some left over chicken if i have any spare

I'm a bit 'over' sandwiches right now so pita bread is a welcome change
  • I'm quite into wraps and pitta bread at the moment.

Roast veg such as peppers, onions, courgettes, mushrooms, tomatoes with a little grated cheese and some greek yoghourt. Add some chilli if you like.

Sweetcorn, diced onion and kidney beans (any other tinned beans will do other than baked), mayo and a dash of chilli with grated cheese.

Old favourite cheese, onion and mayo.
