Sandwich filling ideas

Hi,
I'm looking for ideas for sandwich fillings. I usually have ham combinations (e.g. ham and chutney, ham and mustard), but given ham is a processed meat I'm trying to cut down on this. Also our local asda have just got rid of their deli counter! I'm also trying to avoid too much high fat cheese (e.g. cheddar), happy with lower fat cheese e.g. soft cheese, mozorella.
Does anyone have any other ideas for what to do for sandwich fillings? So far I have:
Egg mayonnaise
Tuna and sweetcorn mayonaise
Hummus and vegetable (pepper, tomato, cucumber, olive etc)
Soft cheese (philadelphia style) and vegetable as above.
I try to vary things to avoid getting bored.
Also any sandwich filler recipes that can be made at the start of the week would be good:)

I used to take to work - a couple of times a week - pre-cooked chicken Tikka. It was in the chilled aisle of the supermarket.
I used to split open a pitta bread and put some of this chicken in with a bit of salad and some mayo. Really nice and different and the pitta was a welcome change from general run of the bread!Cat, Dogs and the Horses are our fag and beer money:beer:

Chicken scraps & tomato

My Fav is as follows:
2 slices of toast, Make sure it is buttered before it goes cold.
Mash up a tin of sardines less the brine/oil and add a good dollop of tomato ketchup and some chopped onion.
Put it into your sandwich box and into the fridge for the morning MMMMM0 -
One I make for hubby is - start with a rough egg mayo( pretty chunky ) then I grate in a small bit of cheese, add some chopped scallion, chopped pepper, olives, gherkins, tomatoes - whatever I have to hand. Season as needed Need to mix enough mayo to bind it but not make it sloppy. I make enough for three days of sandwiches, keeps well in the fridge0

Brie and redcurrant jelly.
Mozzarella, tomato and basil.
Grated cheese and onion mixed with a little mayo.
Brie, thinly sliced pear and caramelised onion.

Instead of sandwiches i sometimes do a rice salad.

peanut butter and banana
peanut butter and cheese
marmite cheese and tomato
grated cheese and carrot, chopped spring onions and 50/50 mayo+ salad cream
drained tinned fish mashed with cream cheese and finely chopped onion
cream cheese and banana
cream cheese, chopped dates and chopped walnuts
cream cheese, olives and (sun dried?) tomatoes
left over dahl with sliced onion and chutney

Like this thread, as I always struggle for interested sandwich fillings.
Favourites of mine are:
Egg and cress
Pate and cucumber
Brie and basil
Ham, emmental and mustard
Peri peri chicken and coleslaw (this is a leftovers filling)
Pork, sage and onion stuffing and mustard (also leftovers)
Liking the idea of humous in a sandwich, going to need to try that.Zebras rock0
