Vegetarian Christmas

This is the first year i'm actually making christmas dinner myself, normally we go to my folks. But first year of married life, and we've ended up having a couple of friends aswell, one of whom is a "vegetarian", she eats fish but since i'm making dinner and i hate fish she's having something else.
I was thinking of a nut roast, or what i make for myself alot a carmelised onion and feta tart (just premade pastry with stuff on top). I was vegetarian for about 7 years before i met my OH but I would just eat a massive plate of vegetables. If you're looking for something easy tesco had a fair selection of vegetarian christmas meal things, nut roasts, quorn roasts and the like.0 -
It may not sound festive but I am salivating at the thought of a good vegan curry for Christmas lunch. Miles tastier than anything that could come out of an oven.Value-for-money-for-me-puhleeze!

vbites have started doing meat free pigs in blankets, you can get them in holland and barrets or order from vbites website. This is my first meat free christmas too, my partner's Dad makes a lovely parsnip nut roast so I am going to steal the recipe for that.0

Im a vegan but you could easily adapt most meals. In previous years my favs have been stuffed butternut squash with walnuts, cannellini beans and thyme/ Roasted squash, cranberry, walnut and mango puff pastry parcels/ Vbites Meat-Free Celebration Roast (obviously the lazy option!).0

If you're eating with others who are eating turkey, something that goes well with all the trimmings. I did a leek gratin from Dennis cotters cookery book one year. I'm not a vegetarian, but was in the past and have had other vegetarians join us. It's nice to have a separate special dish to replace the turkey. But bear in mind, if you're trying to cook a turkey at the same time you'll need to edge in a bit of space in the oven.0

Stuffed peppers are nice and colourful. You can use any nutmeat recipe for the stuffing.0

Most quorn products taste the same so, although I do have a few I don't tend to eat as much.
We do make a lot of vegetable curries, plus they can be made in advance, freeing up oven space.
