Vegetarian Christmas

This will be my first Christmas where I won't be eating meat so I wanted to make something special for the main meal itself and was wondering what others will be having instead of the traditional turkey.

Are there any particular favourites you wouldn't mind sharing? :)

I've been veggie for over 30 years, so if it's you cooking, cook something you know you'll like (maybe a good lentil or nut roast?) but I often make large mushrooms filled with stuffing (not meat, obviously!) which could be packet or home made, then meat eaters can have them as a side dish if they want. Very quick and easy, as you'll probably have enough to concentrate on on the day.

I'm not Vege, but i enjoy some vege meals. I think if i wasn't having meat, a nice fish recipie. Although some Veges don't eat fish either.

    Thank you :)

I did think about a nut roast but as I often have that on a Sunday anyway I want to try something different.

Everyone else eats meat but I like the idea of cooking things which they can then have as a side dish so that we're not cooking loads of things :)

I made a chestnut and mushroom wellington one year. The recipe came from this book which you might be able to find in your library.

It was lovely, and the meat eaters enjoyed having a slice to accompany their beef wellington.

Thanks for that idea. I will have a look online for a recipe :)

We usually flip between chestnut, red wine and walnut loaf or something like choux pastry tarts with mushrooms in madeira. loads of recipes out there so have whatever you really want - I always like to make something which will go with roasties and Christmas veg rather than an entirely stand alone veggie dish.

    Pescetarians eat fish.

Vegetarians don't eat fish and get annoyed by pescetarians describing themselves as vegetarians because then they get fish at dinner parties and go home hungry.

I'm the only veggie in the house so I will be cooking the whole turkey and trimmings, but will have a nut burger with my veg. I do love nut roast but there isn't much point in making it for one!
