    The Lotus Biscoff Caramelised biscuits are also vegan. As is the Biscoff spread. If you didn't know that before I do apologise because once tasted, never forgotten (why waste it on toast, just eat it straight out of the jar!)

    Just had something lovely for dinner:

    Potato, egg and pea curry

    2 chopped onions
    4 garlic cloves
    2cm ginger
    1 tsp coriander seed
    1 tsp cumin seed
    1 tbsp garam masala
    1 tsp cayenne pepper
    1 tsp chilli powder
    1 tin chopped tomatoes
    3 tsp tomato puree
    250ml hot stock
    3 tbsp creamed coconut
    1cup frozen peas
    4 potatoes
    2 eggs

    Chop and parboil the potatoes. Hard-boil the eggs, then peel and quarter them. (I used leftover eggs and potatoes)

    Fry the onion in a little oil until beginning to soften, then add the diced garlic, ginger and spices. Stir well and cook for 1 minute, stirring constantly.

    Add the potatoes and stir to coat then in the spices, then tip in the tomatoes, tomato puree, and stock. Bring to the boil and simmer for 30 minutes.

    Drop the heat, and add the coconut and stir until dissolved, then stir in the eggs and peas. Simmer for another 10 minutes.

    If you're being posh, serve with a little chopped coriander and fresh diced tomato, and rice.

    Really quick, filling, aromatic, and enough textures that it didn't lack meat.
    That sounds like a classic case of premature extrapolation.

    I used to make my own almond milk, which was really nice. On my own now, I have been buying the unsweetened one in litre cartons but can never get to the end besides which it does not taste of anything. Does anyone freeze almond milk? I am thinking of making another batch of hm, portioning for daily use and then freezing. The more I think of it, the more appealing it gets. Almonds, filtered water, two dates and a little vanilla. I can`t be doing with 2% almonds in emulsified water, won`t be buying any more. May be I`ll keep the ones I have left for a winter store. I don`t want to do trial and error as I use quite a lot of almonds in a litre
