To cut down on cheese due to a high cholesterol reading, (I found vegetarian cheese vile!) I've been making my own mushroom pate to ring the changes - it's absolutely delicious - quite a few recipes online.

I am a lover of mushroom pate myself! My recipe is here.

That looks really delicious and easy to veganise - and melba toast too, extra yum!

Although I'm not a vegetarian, I like to have one or two meat free days a week.

We have things like vegetable curry, chilli, frittata, mushroom or tomato puff pastry tart, omelette, bean burgers etc

However, as I have a low sodium diet, to control a medical condition, I keep cheese to a minimum.

I found a nice mushroom and pea risotto recipe that didn't require cheese - has anybody got any ideas for any other risottos that don't need cheese to make it flavoursome. Don't worry if your recipe has salt in it - I'd just omit the salt.

Also, I haven't yet found a good recipe for a pasta bake without cheese..... has anybody got any ideas for a cheese free pasta bake?

I often make pasta bakes using a tomato based recipe, then sprinkle some nutritional yeast on top, to get that cheesey flavour.

Butternut squash and butter bean risotto:
Risotto rice (1/2 cup per portion)
Vegetable stock cubes (1 for every 2 portions)
    Boiled/steamed cubed butternut squash
    Tin of butter beans
    1 cup of frozen peas
    Salt and pepper
2 tablespoons of grated Parmesan (you won't taste it as cheese, it just adds to the flavour)

maybe substitute a vegetarian Italian hard cheese instead

A sprinkle of Nutritional Yeast is great if you only want flavour.

They're old, but there's no reason why you shouldn't post on them. The last one is very useful for recipes.

I am sick of being offered fish or chicken when eating out in Cyprus (and in various other countries), because of other, so called vegetarians eating them, and the locals think that's ok for vegetarians. I don't blame the locals, but the people who call themselves vegetarian, but clearly are not. I have no issue with people eating chicken or fish, just don't for goodness sake, call yourself a vegetarian. Makes it so much harder for those of us who are vegetarian or vegan, especially abroad.

I find it annoying too. Years ago we went on a walking holiday in the Kruger Park, and when we told them we were vegetarian we were asked if we were fish eating vegetarians or chicken eating vegetarians! Mind you that's South Africa where you're still considered as being a bit odd if you're vegetarian.
