Can anyone please help me with vegetarian cooking.
My son has decided that he wants to be vegetarian (he is an adult), and I think we've been doing ok so far with it. We've used a bit of quorn, and we're getting some nice vegetarian recipes from the internet. I say "we", because I have been eating a lot of the same things as him, although I am not vegetarian.
Anyway - with quorn. Is it just a like-for-like swap with meat, in terms of quantities. So for example, if a recipe calls for 250g minced beef, should we just be using 250g of quorn or is it not that simple?
And does it cook the same as meat, in terms of cooking time, or does it take less or more time?
Also, what he really misses is Lee & Perrins Worcestershire Sauce on his cheese on toast. The only vegetarian equivalent I have come across is only sold in America, and they don't ship to the UK. Does anyone know of a veggie friendly alternative that is available in the UK please?

I can answer one of your questions, Lea & Perrins according to the ingredients only contains fish in the form of anchovies. As I understand it vegetarians eat fish. It might taste meaty and is certainly added to stews etc. but in itself doesn't contain any meat.

Hi there, I've been a veggie for four and a half years and absolutely love it. You can use Quorn just like you would use meat. There is a convenient veggie replacement for Lea and Perrins and ASDA sell it for £1 in the "free from" foods section if you know what I mean? It's under the brand name Tiger and it's just as nice on toasted cheese. I only found it a couple of months ago. You will have to check labels especially for gelatin as some products use beef or pork gelatin so be careful. If you go to A Girl Called Jack's blog there are loads of cheap recipe ideas that don't use meat. Her lentil chilli is great and chickpeas can be used in loads and loads of meals. Another tip - don't buy the expensive chickpeas in the pulses sections of supermarkets. You'll get them cheaper in the world foods sections with the Indian ingredients. You often save 15- 20p a can.
Do make sure your son gets sufficient iron. I take a vitamin and iron supplement every day to make sure.0 -

Hi, vegetarians don't eat fish, that's pescatarians (horrible word but there you go...). The vegetarian alternative to Lea and Perrin in the UK is called Hendersons Relish, it used to be sold only in Yorkshire but these days I believe you can order it online too and some bigger supermarkets stock it too, at least in London.
Re. Vegetarian ideas there are a lot of threads that have been archived and I am sure someone more IT savvy than me will be able to put up the links.
Also check the Vegetarian Society and Viva, Google them, lots of good info and recipes.

As others have said, you can get Tiger Worcester sauce in supermarkets and health food shops. Just replace meat with the same amount of quorn or own brand veggie mince/pieces. I've been vegetarian for 30+ years and vegan for 1 so I have built up loads of recipes. feel free to message me if you need anything in particular.0

For Xmas dinner, I can thoroughly recommend the Cranks' Nut Roast.... it used to be on their website, but has disappeared during a re-jig, luckily I found it on archive.org https://web.archive.org/web/20141010235634/http://www.cranks.co.uk/recipes/view/brazil-cashew-nut-roast/print - we had a veggie in the family who makes this every year. We loved it, as meat eaters - and the veggie stopped being one after 20+ years and still makes it every year.
