gluten free/dairy free on a budget?

anyone got any tried and tested recipes?
shop brought freefrom foods are so expensive so trying to make more from scratch but not having much sucess. I know with gluten free you need to add extra fluid but everything still seems really dry/crumbly and ends up pretty much inedible after 24 hrs :huh:

    I've recently had to go gluten and dairy free and have found SO many recipes on Pinterest. There have only been a couple that I didn't like in the 2 months I've switched. The start up cost is expensive buying different flours etc but if you batch bake/cook it is worth it! Also look at labels, you don't necessarily have to buy things branded as free from as a lot of foods are naturally gluten and dairy free, supermarkets just like to con you!
    Recipes that have been big hits and staples here are:
    Baked oatmeal -GF oats, coconut milk, fruit, nuts and a little DF choc
    Taco seasoned mince: in corn tacos, scooped up with corn chips or in wraps made with coconut flour. Serve with a big salad
    Flourless brownies
    Steak and sweet potato fries with a salad
    Peanut butter cookies
    Choc fudge cake
    Peanut butter jelly bars
    Blueberry scones (using ground almonds instead of flour)

    Use rice or quinoa instead of pasta. Quinoa can be used instead of oats too. Search Paleo recipes too as they don't use gluten or dairy produce. Honestly, Pinterest is amazing for recipes and I can't recommend it enough!

  • I'm not sure about gluten free but I'm dairy free and it's not too difficult. Vitalite is my go-to spread as it's cheaper than the ones that market themselves as explicitly "free from," and there's usually a deal on some kind of dairy-free milk in the supermarket (as long as you don't mind cycling between coconut, almond, hazelnut, etc, which I don't generally). Curries are quite cheap to make, so I do a lot of those, and things like soups and veggie chillis (most recipes online are good). Some things you wouldn't expect have dairy in (lots of ready meals, crisps), but some things you wouldn't expect are okay (like Oreos, many supermarket-brand biccies, etc). Good luck with it - like f0nz says, Pinterest is really useful!

    I have hated virtually every commercial GF product I have tried, I don't have a sweet tooth and everything seems over sweet to me:eek:

    For the occasional sweet treat (which OH (non GF) also likes I make coconut pyramids, almond macaroons, sometimes a mixture of c'nut and almond and use less sugar. I am gluten intolerant not coeliac (according to the medics) so I am OK with high cocoa solid chocolate and make rocky road with lots of nuts, dried apricot, dried cherries, cranberries, bashed gf biscuits etc, often make them in small fairy cake papers and all my friends go mad for them.

    ETA - having mentioned not having a sweet tooth, I love savoury things, if anyone has a recipe for cheese scones that taste like the "real thing" they will be my friend for life!!!

    I find the best thing is to choose naturally gluten free foods eg meat and veg type / curries/ stir fries for main courses. Lunches I'll have salad/ avacado with nuts or prawns/ nachos or crisps are good as a filler ( check the crips as some contain wheat flour), Desserts fresh fruit of cheese and oat biscuits. For baking I use 'ordinary' recipes that naturally don't contain flour but use ground almonds as a base ( Lidl and Aldi are good for reasonably priced grounds almonds and nuts).

    I agree about gluten free ranges available, very sweet and don't last long. I find they use a lot of rice flour which goes sticky quite quickly. I've made yucca bread which are rolls made with cassava flour ( from south america) also cornmeal or polenta could be used for bread or cakes.

    Like maddiemay I am gluten intolerant so can get away with a little gluten contamination. Check if you buy something sweet that wheat syrup hasn't been used as a sweetener, I fell foul of that with a crunchie bar, also anything with malt or barley is a no go.

    There is a lot of advice on the internet now so you shouldn't be stuck for ideas.
    Before I forget no lager or beer both made from wheat although you can get gluten free.

    Not sure if it's any help but I make gluten/dairy free fairy cakes for a coeliac relative and my small son said they don't taste much different to ordinary cakes. I used Doves gluten free flour and Pure spread.
  • Have you tried wheat free direct it's a bakery and you can order online. BF has a GF diet and hates all the processed GF stuff with the exception of things from wheat free direct. Bread and rolls freezes well too, cakes never last that long!

    if you find you struggle with not having cheese ,try nutritional yeast.I still buy normal cheese as only I am going dairy free. You can buy it on Amazon and ebay . It tastes very cheesy. I sometimes use it to make cheese sauce or quiche . You can make dairy free cheese with it too and there are numerous recipes online .

    I'll preface this by saying that I can "cheat" a little bit. Im not coeliac I have non coeliac gluten sensitivity and dairy intolerance. I have found that I'm OK if I use lactose free milk for tea and coffee and lactose free cheese. Everything else I use is dairy free.

    NOTES
    I usually make 1 huge fritatta a week and then its easy to just grab a slice if in a hurry.
    1 Baked Oatmeal feeds 5 of us (2 adults 3 kids) twice
    I buy 1 loaf of GF bread a month as I don't use it a lot. Genius GF brown bread is about the only one I've liked so far but everyones tastes are different. I also only buy it if its yellow stickered. £2.30 for a loaf of bread is not for me :)
    I normally have a bake off 1 or 2 days in the month and freeze most things. If we happen to run out I will bake again but only if we already have the ingredients in the house.
    I boil 15 eggs at the start of the week and keep them in the fridge for snacks.
