I am with O2 and have a very old Nokia phone.

How do I replace it?

If I call O2 they try and sell me a dearer tariff with a new phone all I want is a new phone with the same price tariff I have now.
They do not want to listen what I want they just want to sell a new package.

I simply want to remove my Sim and insert in a new phone.

All I want to do is Phone send text and take photos and no data.

Easiest way is to buy a new phone on 02 Pay As You Go, and rather than put the sim card that is in the box in the phone put your existing one in.

Typically PAYG tend to be slightly subsidised over buying a phone as unlocked to all networks.

You can look at buying a Tesco PAYG mobile too as you can use your current O2 SIM in that.

I only mention it as Tesco have their Clubcard boost at the moment, so you can double up any clubcard vouchers you have towards your purchase.

Tesco uses the O2 network to make their phones work, so you can use a Tesco phone with an o2 sim without any problems at all.
