    My washing machine gave up the ghost recently, and I was determined to go back to a twin-tub - however I couldn't find one that was sturdy? They seem to be plastic-cased these days and quite light weight, so I ended up with another auto.

    Hubby is lactose intolerant and I often run out of eggs! This is the recipe I often use, a better texture than many other chocolate cakes. I've made it in thin sheets and frosted it in layers for birthdays too.

    I've just made jam tarts thanks to reading some other posts on this board about jam and jelly making that got me hungry.:rotfl:
  • Re baking vegan cakes - I understand one can make up "flax eggs" (ie using flax seeds) instead of using eggs. Not tried that yet - but I guess it's worth an experiment of doing an ordinary cake recipe exactly as per normal but using "flax eggs" instead of eggs and see what happened.

    Tried it - gritty with an unpleasant aftertaste. I ended up making a lemon drizzle using oil, which was very well received.

    I make the majority of my cakes with the same base - 4 oz of dairy free marg, 4 oz sugar (any) - add 8 oz of self raising flour and soy milk to mix. I use this to make a victoria-type cake, with apple, spice and sultanas, with almonds and fresh raspberries, as the centre for a bakewell, with coffee and fudge topping, with cocoa, as a battenburg etc.

    I also have a one pan batter recipe for sticky ginger cake, and a lovely fruit cake recipe.
    For biscs I use a 3/6/9 recipe of sugar/fat/flour - with additions as above for different types.

    You don't really need to replace the eggs. All these cakes don't last so long in the tin, but with a houseful it was never a problem, and now I freeze and use a bit at a time.

    Oh god. Cake. I sort of faintly remember it...
    I've given up Aldi shopping this week - we were having to go to Sainsbugs for lactofree milk and then just nipping over to get this or that while we were in. Then to Costco for their fabulous chicken and again, the RV grazes on the hoof and he likes Greek yoghurt.. Went back to Sainsbugs delivering it so I can control the cost. A lot easier on me as well, saves all that hauling a$$ out in the car then round tiring shops being coughed on.
  • Good idea Mar, as you know we only have the Co-op and a tiny garage tesco, but if I'm heading citywise I do my shopping in one store by click and collect - I don't have the energy for browsing.
    Sorry about the cake recipes - forgot!! Is there anything baked you can have??? What about flapjacks?? You can add most of the above to those for a different flavour?

    I'm better if I try and forget that baking exists!! noooo lol. Reading all the horror stories on the Addisons group about how they put on 15kgs in a month :eek::eek::eek:

    Mar: I bet I could easily put on that amount of weight in that time without Addisons as an excuse.

    I'm sitting here in the middle of chaos. Pickle has turned my bedroom into her 'clubhouse.'
    She did have to check with her mother as to what actually went on in a clubhouse. I think she must have been told that anything goes.
    I insisted that in all club houses there was a chair for an old lady to sit in and knit.
    Pickle wanted to know where we would get an old lady.

    My darling granddaughter can make as much mess in my bedroom as she likes after that.
