I've been busy and made fudgy banana muffins, scotch panckaes and the bolgnese sauce for dinner is cooking away. It was going to go in lasagne but I only have 4 sheets of lasagne so spag bol it is!!!
Oh and a loaf of bread in the breadmaker-the girls love it!!

Fudgy banana muffins sound yummy, are they easy to do?? I love days like today, a few jobs round the house while ds plays, a trip to the park and some cake making, cheap and fun

Ok, here I am, just sat watching the end of the tennis. Not in a very happy mood tonight, had big argument with the ex when he dropped the girls off. All over money of course! He's not paid any maintenence this month, says I stitched him up over the house sale money (which I didn't, I divided it as agreed) and says he's gone to a solicitor. Arghhh...could do without the stress!! One day my life might be easy and stress-free, you never know!!!
ANd the girls have stomped off to bed in a bad mood, not sure why! Oh happy household!!
Anyway, here's the fudgy banana muffins recipe...it's from a lovely new cookbook I got recently for only £5 from one of those people that leave samples at work..it may have been The Book People. (The Usborne Cookbook for Children)
Ingredients: (makes 12)
250g/9oz self raising flour
1 tsp baking powder
100g/4oz fudge
100g/4oz soft light brown sugar
75g/3oz butter
125ml/ 4 1/2 fl oz milk
1 tsp vanilla essence
2 medium ripe bananas
2 medium eggs
clear honey (to brush over at end)
1. Heat oven to 190deg C/ 375 deg F/gas mark 5. Put paper muffin case in each hole in a tray (I dont have muffin tin, use normal bun tin which works fine!). Sift flour and baking powder into a bowl.
2. Chop the fudge into small chunks and put in the bowl of flour along with the sugar. Stir together and make a well in centre.
3. Heat the butter in a saucepan until melted. Remove from the heat and add milk and vanilla essence.
4. Peel bananas and mash until fairly smooth. Beat eggs into another bowl.
5. Add bananas and beaten eggs to the pan, stir then pour into the bowl of dry ingredients.
6. Stir mixture til just mixed together. The mixture should look quite lumpy. Spoon into the cases, almost to the top.
7. Bake for 20 minutes then brush with some honey.
