What a brilliant idea, I am doing something similar in that I want to walk along as many old closed train routes as possible (which should take in all the counties as well). Some of those old train routes cut through some amazing countryside, the scenery is stunning and it has the added bonus of keeping me fit whilst walking between stations.0

What a great thread! I am lucky enough to have visited every county in the UK but some only for a very short visit.
How long do you intend to spend in each one? Lots of counties have masses to see and do whereas others not so much.

i think it will vary between counties. if there's lots to do then i'd find a nice holiday cottage to stay in and make it a "holiday" rather than just a fleeting visit0 -
Right, I've thought of a few:
Cornwall :
St. Ives is lovely and has some really nice shops and, of course, the Tate Gallery. Close by is the Minack Theatre which is an absolutely amazing open air theatre overlooking the sea. It's a good idea to go to look around the theatre but also to actually go and see a performance. The first time me and OH went there we just could not believe it.
Also St. Michael's Mount is worth a visit. Not, in my opinion, as spectacular as Mont St Michel in France but still worth going to.
The Eden Project. Really enjoyed our visit here and hope to go back in the not too distant future.

Monkey World - lots of rescued apes and chimps
Corfe Caste
Swanage Railway
Lulworth Cove
Sussex:
Brighton - both me and OH love Brighton. It has such a good feel about it (although I know not everyone agrees!). In Brighton there is the Royal Pavilion, The Lanes, some nice shops.
Rye
Arundel Castle
Camber Sands
Nymans Gardens and House
Kent:
Leeds Castle
Hever Castle
Howletts Animal Park
Chatham Dockyard
Scotney Castle
Bodiam Castle
Canterbury Cathedral

Southend (the longest pier in the world). I know Southend, again is not to everyone's taste but I love it there because that is where my parents took me and my siblings when we were young. We lived in London and Southend was the closest seaside place (a train ride away). I don't live that far away now and go there quite often

There are gorgeous long stretches of beautiful sandy beaches along the coast (can't remember the names of the places at the moment as we have only been there twice and the last time was about 10 years ago)
Me and OH loved Northumberland and thought seriously about moving there. The only things stopping us was lack of work and the distance from my family.
I have given all the places that me and OH like (we have very similar tastes). Will think of some more for other counties.
Are you going to include London? We were both born in London and lived there for many years. We both still miss in and go back as often as possible (we were there last weekend and are going again tomorrow!). Rutland - and you're only going to see the reservoir? How about the historic market towns of Oakham & Uppingham? The castle and buttercross in Oakham?
Leicestershire - go to Melton Mowbray and buy a genuine, local made, pork pieGo to Market Bosworth and visit the Bosworth battlefield, site of the final battle of the War of the Roses.

i am working down the list going round places on Street View.
The Isle of Wight looks really lovely - Ventnor, Wootton Bridge, Ryde, Shanklin etc.
The Essex villages are really nice too
