With chip-and-pin the retailer won't even see the card - the customer puts it in the reader and types the PIN. It's not like the old days where the retailer had the card in front of them on the imprinting machine.

Not that would matter. Retailers stopped checking cards on swipe and sign and imprinting transactions anyway. That was the main reason chip and pin was created. They still don't really check though, I have two foreign cards (one chip and signature and one swipe and sign) and its very rare for someone to check the signature.
