  • With savoy cabbage I steam it for 5 mins, whilst that is steaming fry off some leeks and bacon bits. Then mix the leeks, bacon and cabbage together and stir in a knob of butter, delicious!

I did a successful recipe the other day with a savoy cabbage. I blanched the leave and stuffed them with a mix of raw sausage meat, cooked rice, and stuffing mix. I rolled them in the cabbage and put them on top of thin slices of potato covered in passata. I covered the whole lot in foil and baked in the oven. They were similar to vine leaves in principle.

  • The Chinese leaves can be used as lettuce and the other made into coleslaw.

  • Can I freeze savoy cabbage?
Should I wash, shred fresh and then freeze in a sealed bag?
Does anyone do this and have any advice please?

Hi, yes I freeze cabbage, just shred and pop into a bag. No need to seal it. Just take out some when you want some. Just as you would if you had bought it from the supermarket.

What can I do with loads and loads of cabbage? I have a mixture of savoy and white cabbage.

So far we have had it with butter and bacon as well as bubble and squeak however I still have loads left so what can I do with it that is tasty?

With the white cabbage I'd shred it finely and fry with sliced onions, sliced apples and chopped frankfurter sausages for about 10 minutes until everything has softened. If necessary add a couple of tablespoons of chicken if it starts looking too dry. Serve with mashed potatoes. This is nicer with shredded red cabbage because of the colour but white coleslaw type cabbage will also work..
