Since the hubby decided to plant lots and lots and lots of cabbage seeds, this year we had lots of cabbages as a result, so some has been picked fresh and used, some has been chopped and frozen, and I decided to have a go at making cabbage soup with some too. I was quite pleased with the results (as were the family), so I thought I would share the recipe with you all.

    1 good sized white cabbage
3 or 4 good sized carrots
    1 large onion
    1 tin chopped tomatoes
    1 tablespoon tomato puree
    1 tablespoon paprika
    1/2 teaspoon hot chilli powder
    approx 1.5 litres vegetable stock

Now I just bunged it all in the slow cooker and left it to cook all day, but I am sure you can do it on the stove. Also, I would imagine you can add any veggies that you like or have to hand (which is what I did).

Finally, I decided to strain and press the veggies through a sieve leaving me with a smooth soup, just because the kids are fussy, but you could either leave as is for a nice hearty winter warmer, or perhaps shove it in the liquidiser for a thicker smoother soup.

The hubby has told me I need to make more so that he can take it in his flask to work during the winter!!

  • I used to make this back in the 1970s when we were really brassic and there were power cuts all the time I would bulk it out with some chopped or grated potato and some paprike to liven it up a bit..If you have it some chopped beetroot gives it a bit of clour and substance as well.
  • Delia's recipe for minestrone has a lot of cabbage in it :)

Actually, now that you mention it, the hubby did mention that it tasted similar to minestrone soup!

I take it this would work with red cabbage, we have alot as well for the same reason. :D
  • Many thanks for recipe OP, I picked up 2 savoy cabbages in Lidl on Saturday because they were 29p or so. Made stuffed cabbage leaves and bubble and squeak with one of them and was wondering what to do with the second one. I can also use up the stock I have left from boiling the £3 gammon joint that was also on offer in Lidl. Thanks again, Kazipoo.
