Ha ha - I've been told that if I make something like this (but without the beans - yuk!) then it counts as a meal! - would probably use lean turkey mince & light cheese & go heavier on the veg - no nuking though - baked on a tray in the bbq - true north style!
so weekly meal plan is not too far off the norm...
sat - we already did the bottom of the fridge concoction for brunch so dinner will be bargain lamp chops, risotto from the freezer & steamed broc
sun - lean pork loin steaks, peppers & eggplant & spinach & onions & toms (some sort of ratatouille) and baby pots
mon - fish & [STRIKE]spinach[/STRIKE] courgette noodles & poached eggs (we eat light after the gym)
tues - pork & broc & potatoes - quick and easy
weds - chicken & pak choi stir fry (another after gym light meal)
thursday - date night (at our local - the new autumn menu should be in!)
friday - trying not to eat out more than once a week so maybe grilled bratwurst & homemade cauli-mac from the freezer
sat - bottom of the fridge omelet
...and since I've discovered that the OH decided that the thin pizza bases were a substitute for wraps this week :mad: no light & healthy veggie based pizza features on our menu!
bf & lunch we each self-cater during the week - my bf's have become egg based (with black coffee) & lunch miso soup based with veggies - apples & oat biscuits during the day on the odd occasion that they are needed - have been avoiding our cafe - it's too calorific even though the food is amazing! - only went twice last month & had 1/2 portions at that!
eta - corn & feta fritters for bf tomorrow morning - OH can have an egg with his if he wants!4 YEARS 10 MONTHS DEBT FREE!!!
