Lightweight vegan food for DoE trip - suggestions?

I was kind of assuming that as vegan foods ready made are quite hard to find that the suggested items would be homemade and not shobbought, Lyn xxx.0

whilst my son is not vegan - when he went on the trip he survived mainly on pot noodles and biscuits! Too much hassle for everyone to use the stove and clean the pots...
The rucksack is heavy and very quickly anything heavy got the heave-ho, even the water - he used a small bottle, refilling it from tap. Came back ravenous and looking like he'd lived in a cave for months.0 -

The nan was brought from Home Bargains. It's garlic and coriander. The brand name is 'Pana' by Pride Valley foods. Instead of yougurt/milk it seems to have vegetable ghee, which seems to be just hydrogenated vegetable fat.No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!0 -
The good news is she got back safe and sound and it appeared she did not starve!

Pot Noodles are not permitted for my groups! They do no contain anywhere near the calories they need & a pot noodle does not satisfy one of the DofE "20 conditions" You should cook and eat a substantial meal each day.
As for water, I'm horrified that he was allowed to only take a small bottle ... My groups must carry an absolute minimum of 1.5l of water per person when they set off in the morning - there is no guarantee that they will be able to refill till the campsite in the evening even though we usually meet them around lunchtime & offer a refill. I suppose if you've never seen the effects of dehydration you may not be concerned about it ... For Gold they need to carry even more water as part of the emergency kit0 -
One of *my* favourite things to eat when hiking is 9bars & I think most if not all are vegan - again often in the free from section at the supermarket or health food type shops (http://www.9bar.com) they are filling, full of natural ingredients, sweet enough yet also keep you going for ages.
Unfortunately 9bars are not vegan as they all contain honey. Shame as I used to love them before I went vegan.

She said she was wet for 3 days...oh dear!
Apparently that was only the practice run. Real DoE happening next month. We were somewhat caught out with this one as we got the equipment list late and both hubby and I were away from home that week. I'd like to help her be better prepared and less wet and miserable next month. She also borrowed my Regatta waterproof jacket, and we bought her Karrimor waterproof trousers as the waterproofs the school gave her were about 10 sizes 2 big. She already had the thermals and fleeces from skiing, so although she said she was warm enough she just got wet an stayed wet!
Can anyone recommend boots and jacket for next month as we obviously need to invest in better gear. She also said the girl she shared a tent with had waterproof socks!
