Sazzle dazzle- I would agree with pp.
I work until 6 on mon, tues, wed and Friday we have clubs so kids have dinner at 5 and we eat at 8pm so some days I just need quick meals. I make sure I cook a 'proper' meal once or twce a week, but make three meals out of it and freeze two.
Good batch meals are chilli, bolognaise, pies, lasagne, shepherd pie, veg/meat casserole, sausage casserole, curry etc.
Then on a work night, I get my frozen meal out and leave it out on the side/ or fridge overnight. When I get home I put (for example) the chilli in a saucepan and put some boiling water in a pan for the rice. In this case we can be eating in 15 minutes because you don't even need to put the oven on.
Once a week we have a quick freezer meal e.g. Fish fingers and chips or chicken burgers and wedges.
I probably have all of the meals above in my freezer right now because once you gave done t for a couple of weeks you get a stock up! So we never have the same meal twice in a week!
My other new find is homemade pizza. I used the buy the packet mixes but now make the bases from scratch. I make three of four at a time. Cover in passata and then anything left in the fridge (onion, ham, peppers, toms, tuna etc) and then top with grated cheese. Cook them all and then put the spare ones in freezer bags and pop in the freezer for a quick hm pizza meal! Yum! Taste much better and you can select the toppings you want and even get kids involved if feeling brave!
I think the key is not cooking from scratch every night and picking which days you will spend a little more time cooking. I love my slowcooker to!Grocery challenge-

Morning everyone,
Had a small spend day yesterday in Mr T. 4*nat yog, 4 pt milk, strawberries and tortilla wraps - £7.20 (to add to sig) NSD today.
I have no bread in so a baking day for me today, 2 * loaves, garlic dough balls, to go with tomorrows lasagne and salad. Also, Banana loaf, fudge cookies and a rhubarb and strawberry crumble, mmmmmm

Nsd today and welcome back scotsaver,well ran into mr t there now to leave a pair of shoes back that were unsuitable and thought while im here i will get value teabags...none, value showergel....none, value washing powder..........none ,now i would have thought they have ran out but not at 9 am so i asked a worker who informed me that a lot of value products have been done away with or are on very low order so they only get say 1 small delivery a week...............this is so we the public will buy the dearer brand,not to be beaten i got my mum in another town who was out shopping anyway to clear the shelves of all the above items, she not too happy lol curses having a mobile phone as she can be contacted at all times now i owe my mum near 40 quid but i would prefer hving a years supply of cheaper goods than paying the higher price for same but in different packaging,came out of 2nd purse.just saying this so if theres something you like in value range maybe stock up as it might go for good hth xxxC.R.A.P.R.O.L.L.Z #7 member N.I splinter-group co-ordinater

Hello everyone
Another nsd for me. I have made some small baby quiches from some mushrooms, tomatoes, spring onions and brie that was in my fridge and they smell gorgeous.
Having the rest of the mushrooms with pasta for tea and hopefully there will be some left for me to take to work tomorrow. I'm working all weekend so I like to get organized before hand.

Had a NSD yesterday (not had many of those this month and have decided will track both spend and NSDs for July) and a very small main shop today of £14.50 in Morries and 2p (after vouchers and MOCs) in Mr Ts!!! so a grand total of £14.52 for week's shopping!

Ald! this morning and spent £26.75. Loads of fruit & veg in as usual - carrots, beetroot, tomatoes, radish, swede, cucumber, apples, mushrooms, strawberries, grapes to name some. I will need more tomatoes at the weekend and some peaches. Couldn't see any this morning and also all their broccoli was yellow so gave it a miss.
Tonight we had HM lamb & vegetable pie with some mashed swede, sweet corn and potatoes. Couldn't eat it all so will be having the left overs for lunch tomorrow.
Have made a small space in the freezer over recent weeks so hope to keep at it until its empty enough to put the contents of the other freezer into it and give this 2nd freezer a good defrost. (luckily the freezer in the kitchen defrosts itself)MARCH £62.38/2500 -

For dinner we had roast beef + HM Yorkshire Pudding + roast potatoes + roasted celeriac/carrot/courgettes + gravy.
