    I've found the trick is to microwave the tortilla with a damp piece of kitchen roll. That prevents it from drying out/cracking when you reheat it. I usually just place it on the kitchen roll so that there's less to peel off when it's super hot and burning my fingers.

    I don't find that mine dry out if microwaved from frozen unless I'm too enthusiastic with the time it's in the microwave.

    A microwaved tortilla wrap is fine, it goes a little more chewy than usual, but if you leave it to cool down for a minute or two, the texture returns to normal. Wrapping it in a bit of kitchen roll helps to keep it from drying out too much (a little steam/liquid will be released) and also stops it from going soggy (after said steam/liquid is released).

    My recipe is bang on 400 calories, with 16g of protein and 60% of your vitamin C for the day. It's a little higher in cholesterol than you might like (I forget, do people care about cholesterol any more)? That's the duck fat, you could probably dry fry the vegetables to make it even healthier, but I'm happy enough with the duck fat as it's monounsaturated (and tastes brill!) I also don't think it would be as filling without a bit of fat.

    inspired by you we're also rocking breakast burritos chez Pavlov :D

    I did frittata muffins last week which were lovely, but the burritos are more filling. We alternate between something egg based and cereal/overnight oats. Prep is half the battle here.

    It is pretty handy making stuff in advance :)

    Today was pretty good for HM stuff, although pork belly pushed me over the edge!

    HM breakfast burrito, rice and beans salad and pork belly stir fry. I may turn into a giant grain of rice.

    Edit: £1 into pension pot, money and stuff!

    Ps. This is now a journal about rice.

    Pps. Just be glad I don't eat lentils.

    So, I'm having a go at making two of these burritos tomorrow (for lunch), after Mrs K said she'd be happy to take one to work. She obviously must care about cholesterol as she told me she wasn't bothered about having duck for dinner tomorrow and that she thinks it would be better to use olive oil?! No idea where I can get black beans so will leave those out, unless they are essential and someone can tell me where to buy them. I trust it is safe to reheat scrambled eggs as I previously thought this was a no go?

    I'm going to wrap mine in tin foil and heat in the oven.

    I'm confused - did you mean to say Mrs K 'was bothered' about eating duck?

    Duck fat fits between olive oil and butter in the 'how naughty is this?' stakes.

    Black beans = W@itrose are actually one of the cheapest places. If no W@itrose, Morris0ns often stock them.

    Reheat scrambled eggs - these are meant to be frozen. It's safe enough to freeze scrambled eggs and omelettes as long as you reheat them thoroughly.
