My best mate took his wife's closest friend with him to buy her engagement ring. She was thrilled that two people she loves put so much effort into the choice. It also explained why they staggered home drunk after 'bumping into each other near the local pub'.

A friend of mine's oh took a friend of hers to help choose.
She did like the ring but it was a little unusual. When they bought their wedding rings she chose a regular 'engagement'ring, solitaire etc so think she would have preferred that in the end. Taking a close friend doesn't necessarily help!
My dh not-so-subtly took me window shopping to get a feel for my style, got a lovely proposal and a ring I love.
Each to their own though...

My engagement ring is a family ring (it originally belonged to my OH's mum), but it is exactly the ring I'd have picked out for myself. Then again, I know quite a few women who'd want to pick themselves. You know your girlfriend, so (hopefully!) you know what she'd prefer. Have you bought jewellery for her before? How has she reacted to that?
On the subject of taking a friend, I think it depends how well she knows your girlfriend. I would have had no problem with my OH taking my best mate, for instance, because she knows what I would like. But taking a female friend she doesn't know, or know well, just seems like taking someone to get a 'woman's perspective', when her taste may be very different from your girlfriend's and she might pick out something that your girlfriend wouldn't like at all.
