help need leek recipes

We have an allotment and still have lots of leeks. When slice then open they are going to seed, have the think centre. What should I cook wish then, I am at a loss. Have done with cabbage, done wrapped in bacon in cream sauce and instead of onions. Now I am stuck. Thanks in advance.:)

Chop them, simmer in milk & butter, and add to mashed potatoes - put a dish of this in the oven and top with a bit of grated cheese, or sliced tomato. You can cook loads of leeks and freeze them for when you want to make leeky mash too.0

LEEK & POTATO SOUP
Makes 2 x 250ml servings
INGREDIENTS
250g of leek
250g of potato
1 tablespoon of oil
1 vegetable stock cube
400ml of water
100ml of milk
METHOD
Cut the leaves and root off the leeks. Cut them in half lengthways. Wash them under running water to get any grit out. Shake them dry. Chop them into 2cm (1 inch) pieces.
Peel the potatoes and chop them into 2cm (1 inch) pieces.
Put the oil into a saucepan on a medium heat. Add the leeks. Fry for 10 minutes. Stir frequently to stop them sticking.
Add the potatoes, stock cube and water. Stir thoroughly.
Bring to the boil, then turn down the heat until it is just boiling. Continue to cook for another 15 minutes until the potato is soft.
If you have a food processor, put the soup in it and blend it to the desired consistency. If you have a hand blender, put it in the soup and blend it to the desired consistency. If you don’t have a food processor or hand blender, use a potato masher, press the soup through a sieve with the back of a spoon, or leave it lumpy. If you used a food processor, rinse out the saucepan and put the soup back into the saucepan.
Add the milk. Stir thoroughly.
Put the saucepan on a low heat and reheat the soup gently.
ADDITIONS & ALTERNATIVES
For French Potage Bonne Femme, add a finely chopped clove of garlic.If you fold it in half, will an Audi A4 fit in a Citroen C5?

I tend to chop them up and freeze them raw, I then sneak them into dishes when OH isn't looking0

I love leeks baked in the oven and topped with lemon juice and ginger. I got the recipe out of a book by denis cotter- see a variation on the recipe on his website:

im another who freezes them - they are absolutely fine in anything I use them in too xwading through the treacle of life!
