Leeks are lovely in a quiche with a little cheese. You could also add bacon, or keep it vegetarian. I made half a dozen or so versions of this last year, though I couldn't eat it, and each one was well received.

Finely chopped leeks fried in a little butter and oil with 'juliennes' of carrots and lots of ground black pepper - absolutely delicious, and goes with all types of meals.
2016 is the year I am going to find time for me, and cherish the time I spend with my friends and family.
It is also time to save - Aim £4,000 - So far this year - £230/£4,000

I just slice and freeze them as well. I will not have this problem this year though as I have three seedlings from this years sowing :rotfl:

Leeks in white sauce is a family favourite here with a roast. Slice the leeks and steam for til tender, meanwhile make a basic white sauce, season to taste and add some nutmeg. When leeks are ready simply add to the sauce - yum!

I buy leeks when they are reduced at the g'grocers and if I don't make leek and tattie soup I will just wash slice and dice and freeze for use later I love the gentleness of leeeks a mild oniony flavour instead or it being too strong.I add to any recipe instead of onion.Even HM burgers with finely diced leeks are lovely

A tip for buying leeks: pick the thin ones, as the thick ones can be a bit tough.
If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

Leeks in cheese sauce is favourite here.

I also slice and freeze them and throw a couple of handfuls in chicken soup or broth.

We have an allotment and still have lots of leeks. When slice then open they are going to seed, have the think centre. What should I cook wish then, I am at a loss. Have done with cabbage, done wrapped in bacon in cream sauce and instead of onions. Now I am stuck. Thanks in advance.:)

Home-made cheese sauce (mature cheddar and plenty of salt) - add in sauteed leeks and mushrooms. Add to pasta. Yummy.

This is my recipe for leeks done in the slow cooker. Recipe is for 2 people.

400 g leeks (trimmed and sliced)
    1 medium potato (sliced thinly)
2 chicken legs (skin on but trimmed well and slashed a couple of times)
1/2 pint cider (or chicken stock)
    1 oxo cube
    Mixed herbs

Put cider, oxo & mixed herbs into slow cooker, add sliced leeks and mix. Put a layer of sliced potatoes on top of leeks and then put chicken legs on top of everything. Sprinkle chicken with salt and pepper.

Put slow cooker on high for about 4/5 hours and then put into oven (without lid) at 170 c for about half an hour to crisp up chicken.

Sometimes I use wine instead of cider.
