I like to put sliced carrots, diced parsnip and chopped leeks in a roasting tin with stock and then roast lamb shanks on top. It's delicious.
Or add a handful to HM soups which I then freeze in portions.
Or they go well in a 'light' chicken casserole with butter beans.

Place the leek on a chopping board and remove the worst of the green flag which may contain dirt and save for soup etc.
Take off most of the root leaving enough to stop it splitting then cut through length ways with a sharp knife starting about 1 inch from the top and stopping the same from the bottom, turn 90 degrees and then repeat.
Press the root end against a solid object or back of the work surface and push firmly it will open like a chinese lantern. Lighly stuff with dried or fresh sage then cook in your prefered way, serve with cheese sauce or melt some cheese over it under the grill .
