Cheap Puddings

Hey everyone, just wondering what type of puddings you guys make? We're a bit fed up with bread and butter pudding, cakes and apple crumble in our house. Anyone have a good suggestion for our weekly pud on a Sunday night?

    instead of pineapple upside down pudding - change it to peaches and butterscotch (tinned peaches and brown sugar) ]

    Microwave sponge with custard or sauce, there are many different recipes. Chocolate,syrup, jam, fruit ,sultana takes 2 mins to cook.

  • Second vote for microwave sponge pudding, I use a James Martin recipe and love it. Pancakes another option, with range of fillings, or home-made rice pudding. I love meringue nests with fruit and ice-cream

    Forgets to post, SS newbie. Yum Missing, not it was hot and just out of oven. You will have to be quick as it shall be finished this evening.     5 Have to say that the Chocolate Sponge, recipe handed down by generation was tooo good for BoPette. 2oz Butter, (Not that chemical factory mix), 2oz sugar. 4oz self-raising flour. I medium egg. Fresh Ginger, grated, juice of 1 orange and its zest, grated. Cream butter, sugar. Add egg. Mix in flour and cocoa. Add juice and ginger, zest. Put in 1pt pudding basin and steam. Serve with fresh lumpy custard

    Steam for about a hour and 30 minutes, prod with skewer to see if done.

    4 Add yous lot, no dipping fingers either OK Got that. You know you want to dip fingers, but eggs raw could give you all an upset tummy. So no dippy fingers.

    3 Now on the subject of dippy, we did not have Dippy eggs this weekend, as the last egg went into that Chocolate sponge. But BoPsie did buy a fresh box of the only cereal a real ruff cut could have. The Honey Monster cereal pack

    2 Nite for tea, we have the other half of that hand rubbed ruff pastry chicken pie. As celebrated by BoPette, For now, it is back to the claw and crunch sandwiches.

    bakewell tart, jam rolypoly, baked treacle sponge & custard, lemon surprise pudding, trifle, cheesecake...

    I've never cooked a pudding just a big dinner.
    (mind you apparently after my cooking you probably wouldn't want a pud!)

  • Something from India - but it's lush - is 'Kheer' which is essentially a long grain rice pudding cooked and cooked down in a pan until it's soft rice pudding in evaporated milk, then chilled and served in small bowls until everyone's stuffed :)

    1 tbsp basmati rice
    2 pints full fat milk
    2 tsp ghee or unsalted butter
    4-6 green cardamom pods
    2 tbsp sugar
    a few strands of saffron (optional)
    a few plain pistachio nuts, chopped (optional)

    bring the rice, milk, butter and cardamom pods to a boil in a large, wide, heavy pan, stirring often.

    Keep it just simmering, stirring every so often until the rice is cooked and broken and the milk is thick and reduced by 2/3rds (about 1-1.5 hours)

    add the sugar, saffron & nuts, cool then chill.

    1 cup sugar 1/2 cup plain flour
    1/4 teaspoon baking powder pinch of salt
    2 tablespoons melted butter 2 eggs
    1 cup milk 1 cup coconut
    1/2 teaspoon vanilla

    Mix sugar with flour, baking powder & salt. Add melted butter. Add 2 well beaten eggs and milk. Mix in coconut & vanilla. Pour into greased pie plate and cook in moderate oven for 30 - 35 mins.

    NB: The reason it's called Impossible Pie is that when it's cooking it makes it's own pastry layer, it's own egg custard layer & the coconut rises to the top making a topping layer.

    Sticky toffee pudding. As there are just two of us we have some then freeze the rest into individual portions which can be reheated in the microwave for a midweek treat.

    Don't discount the basic tiramisus and trifles pre-made. Alternatively make your own trifle but instead of doing it traditionally use say chocolate custard with banana and toffee (the rolo desserts are good for this) and later in wine glasses.

    Sometimes just fruit, ice cream, sorbet or jelly can be the ticket rather than heavy puddings.
