    How about rice pudding, i use the recipe below. Put all ingredients in slow cooker on high for around 5 hours. Give a little stir after one hour. Can serve with stewed fruit or a dollop of jam in the middle. This recipe is cheap, quick and very tasty.

    Ingredients for Rice Pudding

    Serves: 4

    110g (4 oz) pudding rice
    55g (2 oz) sugar (granulated or caster)
    25g (1 oz) margarine
    1.2L (2 pints) of milk (whole, semi skimmed or skimmed)
    1/2 teaspoon of cinamon or grated nutmeg

    1 cup sugar 1/2 cup plain flour
    1/4 teaspoon baking powder pinch of salt
    2 tablespoons melted butter 2 eggs
    1 cup milk 1 cup coconut
    1/2 teaspoon vanilla

    Mix sugar with flour, baking powder & salt. Add melted butter. Add 2 well beaten eggs and milk. Mix in coconut & vanilla. Pour into greased pie plate and cook in moderate oven for 30 - 35 mins.

    NB: The reason it's called Impossible Pie is that when it's cooking it makes it's own pastry layer, it's own egg custard layer & the coconut rises to the top making a topping layer.


    Would this work in a slow cooker do you know? I've got no oven at the mo,apart from a halogen which I am not having much success with.

  • How about a fruit fool? just equal amounts of sweetened stewed fruit, custard (tinned is fine) or plain thick yoghurt and whipped cream gently blended together and then chilled, it's ambrosial and you can really use any fruit you happen to have. Our favourites are gooseberry and rhubarb fool, but most things work very well.

    I've never heard of Impossible Pie but it sounds fascinating.

    We love waffle berry pudding, similar to this link. We use whatever berries are around at the time.

    We don't have puddings generally. Occasionally when we eat out we share one, and I make a cake or flapjacks for my husband (he can afford the calories) to take to work for the week, but I don't see the need for stodge and sugar every evening.

    You can buy smartprice instant strawberry whip (angel delight) for pennies, and it's lovely with tinned fruit or ice cream.

    Takes me back to my first boyfriends mum's Sunday tea. She would always put out a buffet. Followed by a dish of fruit in jelly topped with flavoured angel delight. I loved it. But it never tasted the same when I made it!
