for the benefit of of the jury please explain "binwalk" and how it can be used.

I'm guessing the poster who mentioned this originally was referring to http://binwalk.org/ I'm also guessing he had no idea how it would be useful or he would have expanded on the post. It should be noted that there is no simple fix explained anywhere on the web so far.

My definition is
1. You inadvertently upgrade the firmware on your Epson printer
2. You discover you can no longer use cartridges that cost a few quid a set
3. You decide Epson can take a hike because you aren't paying £20+ for a set of theirs
4. You pick up the printer and take it on a binwalk
5. You buy a new printer from a different manufacture who doesn't force you to buy their cartriges.

An update on my original post, I have now taken delivery of a new set of 4 refillable cartridges, put them in the printer and they all work. Advice from the suppliers " do not upgrade drivers in the future"
