She is a talented chef and as i have told everyone she lacks confidence and cant delegate. Her technical skills are outstanding and i know from experience she will be more than able to pass this on. The chap will also spend a week on every section doing mise en place so will have skills in everything from veg prep to desserts.

By delegate do you mean you put too much work on her and she doesn't feel able or willing to ask for help.

In all my years in catering I have never seen an expectation for the commis, (either front of house or rear) to delegate tasks to more experienced staff members.
