    This morning i phoned the local jobcenter and explained we had an open opportunity for someone unemployed to gain some experience in catering blah blah about 30 mins later i got a call from a work program provider called prospect services who had a client with them who is looking for experience in catering. I told her to send him down this afternoon for a chat. He came down on time and smartly dressed which was nice to see :)

    Wow, that's very convenient, it deflects all of the criticism you received, and all within less than 24 hours. What an amazing coincidence, it's almost too good to be true...

    I must admit Im erring on the side of the OP here. He's giving someone much needed experience and, hopefully a wee qualification plus useful contacts. You've also got to remember the time employees are going to commit to training this volunteer. They're hardly going to hand the chap an apron and a knife and tell him to get on with it. This could be a brilliant opportunity especially if you can involve him in all aspects of running a kitchen - from veg prep to dressing plates on the pass.

    OP - Id make a point of keeping the poor chap away from washing up as much as possible just to prove that he's not going to be an unpaid KP!
    How much experience are they realistically going to get if chefs are struggling & kitchen isn't setup for training people.

    We have 2 kp's so he will be nowhere near the pot wash and he will experience mise en place on every section and during service will be on starters with my commis which involves plating 3 cold starters and 5 cooked to order so place experience will be frequent.

    AAT Level 2

    6 O levels 8 CSES

    Competent user of SAGE 50, Pegasus Senior, Pegaus Opera, Tatra 2000, Nav, Agresso to name but a few.

    Microsoft Office 2007, Excel 2007, Powerpoint.

    What? Only the commis is struggling and it is well known all commis will struggle that is why it is my job to develop a commis and not just sack them. If i just cut her off and didn't help i would be failing her and myself. The kitchen is very well set up as well and we have all modern equipment such as an elro sirius induction range so we can train to a very high standard.

    And you spend your days unemployed sat on a forum trying to start a fight. You should focus more on what you just wrote above than trying to discredit me because if that is true you are a very capable person.

    It's also about whether the staff are willing & capable to train others.

    It is written in there contracts to assist with the development of junior chefs.

    What experience is the person likely to receive given the person they are to get experience from are themselves inexperienced ?
