    Thanks, it is using left over meat, probably make a roux but I've only made cheese sauce that way before, would I replace the milk with stock? Sorry I don't normally make pies!

    Yes, just replace it with stock or wine or any liquid you want. I use less liquid then I'd use it a cheese sauce so it's thicker.

    Its just me this week so I'm going to try and use up what I have in freezer/fridge/stores. I bought a gammon joint in ald! last week so that will form the basis of quite a few meals and I have a bag of frozen chicken breasts in freezer and basics in my store cupboard (potatoes, onions, rice, tin soup, nan breads, tin pineapple, sweetcorn, sauces etc)

    sunday 2 March - roast gammon, roast potatoes, use up 1/2 head broccoli, carrots & 2 small Yorkshire puds lurking in bottom of freezer, gravy

    From Mon 3 March in no particular order

    1. leftover slice gammon, oven chips, tinned sweetcorn, tinned pineapple

    2. leftover slice gammon diced with sliced potatoes and onions baked with a tin of chicken soup

    3. chicken breast and peppers in black bean sauce, boiled rice

    4. Cajun chicken breast with jacket potato and tinned sweetcorn

    5. leftover diced gammon with jacket potato and beans

    6. chicken breast in curry sauce, rice, nan bread

    7. pizza, garlic bread, wedges


    Should just need to buy 4 pts milk, yoghurts, salad, pizza (99p in ald!) & garlic bread 39p and crumpets.

    Breakfast will be crumpets or porridge (from stores), lunches will be salad with leftover gammon or chicken.

    Really pleased with how the menu planning is going, week 2 went great, didn't deviate once. I'm enjoying the planning and the variety in meals we're getting as a result. Also enjoying less food waste! And slowly getting there with emptying the freezer.

    Here's this week's plan:

    Mon - Baked fish with chilli & ginger
    Tues - Pancakes!
    Weds - Chicken & veg pot pies (using the last of the LO roast chicken from last week, that I froze)
    Thurs - Miso prawns
    Fri - Lemon & chilli pork (pork from freezer)
    Sat - I'm out so DH will just have a pizza
    Sun - Cottage pie (mince in freezer), roast veg. Apple & pear sponge pudding (using leftover stewed apples from freezer)

    Baking this week will be lemon & blueberry cupcakes (blueberries from freezer)

    Here is mine. It's flexible depending on how the day has gone. I'm determined not to get a take away this week!
    • S- Rubber chicken pie and cubed potato
    • M - Cottage pie with carrots and peas
    • T - Pancakes
    • W - Tuna pasta bake with hm crispy topping made from breadcrumbs cheese and crisps
    • T - Roast chicken and chips
    • F - Hm meatballs with hm sauce

    Thurs - Chicken wrapped in bacon with veg
    Fri - Being taken out :j
    Sat - Stew and dumplings
    Sun - Chicken or beef sunday dinner - depending which I buy at the butchers Friday.
