Meal Plans WB 3rd March 2014

We did very well this week, the only change will be tomorrow where we've decided to go out for a curry treat :j

Going out for a shop run later but aiming to get most things for 2 weeks and just top up with fresh items next weekend - this may or may not work :rotfl:

Veg stir fry (or doggy-bag curry if there's any left!)
Prosciutto wrapped stuffed chicken & carrots
Sesame crusted tuna with noodles
Mushroom risotto
Salmon en croute with wilted spinach
HM pizza
Chicken & chorizo Jambalaya

    Ok, this week for us:

    Saturday - LO Lasagne and Garlic Bread
    Sunday - LO Chicken Casserole and Dumplings
    Monday - Toad in the Hole
    Tuesday - Chilli, Sour Cream, Natcho's and Salad AND Pancakes for Dessert
    Wednesday - Chicken Jambalaya (with LO Chicken and HM Stock)
    Thursday - Cottage Pie Toasties
    Friday - Chicken Casserole and Dumplings
    Saturday - LO Chilli, Sour Cream, Natcho's and Salad

    We're doing ok and sticking to Schedule while DH is away. Using the SC more, I made the cottage pie in it last week (yummy) and I'm planning on trying the Chilli in it this week :)
    We spend money we don't have, on things that we don't need, to impress people we don't like. I don't and I'm happy!

    Pizza and dough balls
    Soup and toast followed by a couple of pancakes
    Home made meatballs with spaghetti and spicy sauce

    We ended up eating out a couple of times last week as DH was off and we were out a lot, so the menu went a little bit off plan.
    This week's plan is -
    S - Burgers with salad
    S - Grilled chicken with new potatoes and salad (out at a gig)
    M - Gammon and veg fried rice (out at theatre)
    T - Turkey balti with rice and chapattis
    W - Lasagne
    T - [STRIKE]Turkey balti with rice and chapattis[/STRIKE] Just went to make this and not got enough tomatoes to make two lots, so used most of the same stuff and made a Shepherd's Pie base instead. Will serve with polenta, and swap Friday's polenta for roast potatoes.
    F - Beef casserole with polenta
    S - Pizza

    DH is away from next Sunday, so my plan runs until then. I've got everything in that I need, so should be a cheap week :)

    Depends if you want to go 100% homemade. Soup is great, but if using leftover meat I like to make a Rou and use stock to make it into a sauce.

    If the meat is fresh I coat the meat in flour and simmer on the hob in stock for an hour (I think, it's been a while), when you turn off the heat and leave it thickens up on cooling.

    Nowadays I use leftover stew/casseroles to fill my pies because it's just easier :)

    Im bored of having the same stuff!! Someone inspire me :(
    Today is roast chicken dinner with a defrosted bone in chicken breast.
    I've to lots of mince in the freezer sausages and chicken peices. Anything different I can do?
    My meal plans always change as mostly all my meat is frozen anyway so I can chop and change :)

    Were having mince 3 different ways this week,
    Burgers by grating some ginger, onion, carrot, garlic and any crust of bread that needs used added to a 500g pkt of mince with a touch of turmeric. That makes us 8 large burgers. I freeze 4 raw but already shaped as a quick meal for another time.

    Chilli, by browning off the mince and throwing away all of the fat that comes out. Add it to the slow cooker with 2 tins of chopped tomatoes, a large pinch of herbs and a large pinch of chilli flakes and 2 beef stock cubes. I then add a large handful of red lentils, 2-3 grated carrots, then diced peppers and onions and a few cloves of garlic and some mushrooms. Add a tin of beans, we prefer normal beans in our chilli not kidney beans near the end of the cooking. Again I get 4 large portions out of this and 4 smaller ones to top jacket potatoes.

    Meatballs. Grate stale bread, onion and ginger and add a pinch of herbs and salt and black pepper to a 500g pkt of mince. I add a beaten egg and then form in to 16 small balls and shallow fry them until all the fat comes out, discard the fat then add a tin or jar of passatta and any veg that you want to use up. This week I have some peppers, mushrooms and cabbage. I'll throw it all in and stir whilst I make some spaghetti. We like a handful of cheese on the top to melt at the end :)

    20 meals from 1.5kg of mince for 2 adults and 2 hungry teens I don't think is too bad :j
