I think I posted on that thread any way but a main ingredient apart from monced pork is nutmeg for the authentic sausage taste.Living on Earth can be expensive, but it does include an annual free trip around the Sun.0

My toddler loves sausages....doesn't matter whats in them (thats what I worry about!) and so I thought it might be a good idea to start making some and sneaking in mushed up veg and things... Obviously she doesn't eat ONLY sausages lol.
Has anyone got any top tips on what equipment is needed? Whether you need skins or not, receipes etc... I buy the good quality organic ones from the supermarket but would like to make our own for more variety.0 -
Follow any recipe for sausages then use clingfilm to roll them in; poach them, then take off the sliing film to brown them up. Dont' need sausage skins then! (Tie knots in teh ends of each little log). You can add carrot, leeks, onions, spices + herbs, mushrooms etc. to any finely minced meat. make the mix, fry a little off to see how you like it, then you can adjust the batch if you want to. If you get the meat from a butcher, ask him to grind it for you.0

I saw one of those beware what you're eating type progs and it was on sausages. Now you might not want to eat a pigs ear etc but its not bad for you and the conclusion at the end of the program was that the worst thing that was in most sausages (and good were pretty much as bad as cheap) was salt, in some cases more salt than in sea water.0

If you have a Kenwood Chef you can get a mincer and a sausage making attachment that makes the whole thing really easy. You can use skins with the adaptor or just use the mincer and shape into pattys.
Both are available on ebay for cheaper than buying new. Well worth it in my book, you can do all sorts - beef, pork, lamb - our favourite is chicken and garlic sausage, though pork and apple are a close second!:happylove0 -

Just starting to try and make my own sausages,but dont want to buy a shed load of sausage skins till find out more about how they will turn out . Anyone know how I can buy/beg some sausage skins to use on a trial basis??
(tried local butchers but they are......understandably......reluctant to give info!!!)0 -

Alternatively, make sausage meat patties (like little burgers) to find out if you like the flavour. Flour your hands and a board to avoid too much stickiness, and make them any size you like - easier to cook as do not roll about.0
