Watched Jamies's money saving meals online last night and did like the idea of roasting chicken for one meal and then using leftovers the next day for cassarole. I just can't afford chicken breast anymore even though we all love it. I don't really like thigh's they taste fatty to me.

I love the thighs - usually juicier and tastier than breast. I shred them (like peking duck for pancakes) and use the meat in stir fry - fry some chilli, garlic and ginger, add lots of onion, peppers and mushrooms, then the chicken. Mix in some cooked noodles - season with soy sauce - squeeze of lime and some chopped corriander if you have it. Makes an enormous meal. :D

my cupboards are still well stocked and shouldnt need any fresh fruit / veg till sunday at earliest so pleased with my grocery budget, just need to look at where my "other spends are going .all jotted down in my notebook but at least i have only withdrawn money once this month rather than £50 here £100 there...so should have bit more to add to paying off my cc's :D

two mini camembert x two - can this be frozen does anybody know please?

Yes it can - I bought quite a few last year. I defrost and then oven bake to serve with dippy bits for lunch so not tried using them as biscuit cheese from frozen.

The third of my 5 weekly shops this month in Ald! tonight and spent £21.30. A little over my £20 a week budget, but overall am on target. It did include £7 of dog food, so hoping the next couple of weeks will see a bit of a reduction in spends.

Batch of bolognese made tonight - 1 eaten and 4 more for the freezer. Batch of chilli to make on Saturday and first go at cooking a beef brisket on Sunday. That was a YS purchase just before Christmas.

Still meal planning and sticking to that and the shopping list. :)

Yet another NSD here. Really doing well with spends this month - I plan to use up stocks - we have so much food in for two of us!
We had casserole + roast potatoes + carrots + cabbage + garlic for dinner.

Thanks all - Himself is adamant it must be a mistake, we are due to clear the entire loan this year, so he is going to try to sort out tomorrow if his work allows (he is on 12 hour shifts which unfortunately do not tie up with most office hours and they won't speak to me, because the agreement's not in my name).

Spent 49p on another loaf of GF bread which is bunged in the freezer, very handy. Hope it's a better day tomorrow. :o

Thanks so much ... i knew i should have got the others too, but then i probably wouldn't have had room in the freezer.

  • Good morning :)
    Those scones look fantastic :T
Have been up since 4.30 stressing about a hospital appt I've got this morning, so I've used the time to meal plan for the next week & write my shopping list!

Quick question, does anyone have a fantastic recipe for HM beef burgers, I can't remember the last time we had burgers, so would like to make them next week :)

I'm hoping today will be a NSD, but depending on today's outcome I may need comfort food later;)
Hope everyone has a good Friday x
