Need to plan meals. I'm getting bored of "iffits" now!
So the plan for thus week is:
Sunday: chili (ff) with potato wedges and salad
Monday: gammon, egg and chips
Tuesday: cheese and gammon pasta bake for lunch (carb loading for alcohol drinking that will ensue)
Wednesday: left over pasta bake/ toast depending on how hungover I am
Thursday: chicken stew (ff) and will make us dumplings
Friday: fish pie (ff) with broccoli and carrots
Saturday: peri peri chicken with salad and chips (hairy dieter recipe)

Hi Wendywitch, the recipe for the pie is adapted from "Food from Plenty" by Diana Henry - fab book and very good for interesting leftover recipes. I must admit I haven't cooked it before, so fingers crossed!
Serves 4
1.2kg (2lb 12oz) butternut squash
6tbsp Olive oil
3/4 tsp ground cinnamon
Salt and pepper
700g (1lb 9oz) spinach, washed and tough stalks removed
2 onions finely chopped
2 garlic cloves, finely chopped
Generous grating of nutmeg
75g (2 1/2oz) Parmesan, grated
250g (9oz) ricotta
2 eggs lightly beaten
175g (6oz) feta, crumbled
1 1/2 tbsp chopped parsley
50g (1 3/4oz) butter
250g (9oz) Filo pastry
350g (12oz) cooked turkey
Preheat the oven to 200° C/400°F/gas mark six. Cut the butternut squash into slices, discard the seeds and skin and put in a roasting dish. Brush with oil and scatter on the cinnamon and season. Roast for 20-25 minutes, or until tender.
Wilt the spinach, then leave to cool before using your hands to squeeze out all the water. Heat the remaining oil in the frying pan and saut! the onions, then add the garlic and cook for another 2 minutes. Add the spinach, the nutmeg and half the Parmesan. Set to one side. In another bowl mix the remaining Parmesan, ricotta, eggs, feta and parsley.
Take a 22cm springform. Melt the butter and brush it over the tin. Line the tin with 2/3rds of the filo- keep it under a damp tea towel as you work to stop it getting brittle and breaking. Lay overlapping sheets on the base first, then place sheets like the spokes of a wheel, radiating from the centre of the base with each hanging over the edge. Brush the sheets with butter as you go.
Lay in the spinach, then half the squash, then all the chicken. Put the cheese/egg layer on and top with the remaining squash. Pull the overhanging filo over the filing and brush with butter. Use the remaining filo to cover the top, overlapping the sheets and tucking them down the sides of the springform.
Cook in the oven for 45-50 minutes until golden. If the pastry is starting to catch, cover with foil and the time is needed for the eggs/cheese to set. Once cooked, leave to cool for 10 minutes then serve.0 -

Tonight Bread and fridge clear out picnic.. Plenty of sweet eats for DH, nice bread for me, some salads, cheese still, bit of assorted raw veg...
Tues (new years eve)
Just DH and I so simple supper.
Undecided as yet, but will be either be lentil, yellow pepper and goats cheese or lentils and carrots with herbs followed by a very simple little rhubarb trifle.
Oops, decided now.....lentils with carrots it is....with home baked bread.
This is very symbolic meal for us. We've chosen something deliberately simple, to remind us that pleasures most often are simple, often universal. Lentils are for prosperity, as are the carrots, they are round like coins. The herbs are for lush easy growth and and vigour, and the home made bread for independence and self reliance and the importance of hard work (no letting the Panasonic do the kneading!)
The something sweet, because we want a sweet and fruitful year ahead. (Edit...no rhubarb available! Shock! Well, I'll have a route around. We want a trifle because of the bits and bobs of life, so I will either use freezer berries or some bottled fruit, I'll decide tomorrow)

Beetroot swede and potato bake. Mmmmmmmmm.

Char sui pork noodle soup ( I really want to get better at far eastern cookery and its what I crave most at this time of year, crisp clear light tastes of noodles). (Edit, pork now marinading! It smells fabulous, how can I wait almost a week for this! Recipe only asks for six hours, but I'll be sticking it in the freezer tomorrow morning so I can just defrost and cook at the end of the week. Because we've been in the kitchen all day it made sense to do it today so I don't have to later, if I have time next Saturday I can always be planning for the week ahead then instead)

Persian herb chilau and lamb stewed with quinces OR lamb with za'artar. I think.0 -

That's a rough idea. Meals will be as above but nights may vary dependent on mood.
I've actually managed to meal plan 14 meals just from food we have in already.
This means I should only need to buy a few essentials I.e. Bread milk and potatoes for the week-fingers crossed.GE 36 *MFD may 2043

Tuesday, quorn bolognaise with pasta
Wednesday, roast turkey dinner
Thursday, salmon, new potatoes, sweet corn
Friday, sausages, mash, peas, onion gravy
Saturday, pizza garlic bread
Sunday, piri piri chicken, spicy rice, salad, etc
I just need to stick to it0 -
starting from today
Today, cold gammon, HM cauli cheese, mash, carrots and peas
Tuesday, roast duck, sprouts, cabbage, turnip, carrots, roast pots
Wednesday, lamb chops, peas, carrots, peas, mashed pots
Thursday, jacket pots with beans and cheese
Friday, HM chicken curry and rice
I dont eat meat so will just have the veg for most meals but may have a prawn curry on Friday
Breakfasts will be fruit or cereal for me, Bacon sandwiches, or cereal, cereal bars etc fro OH and DS
Lunch will be bits and pieces of leftovers or sandwiches0 -

Tue - new years eve treat indian takeaway (delivered)
Wed - NY Day roast dinner. Choice of beef or chicken and all trimmings. Prawn cocktail starter. Choc gateux and ice cream
Thu - leftovers probably in a curry
Fri - leftovers in a pie, chips & beans
Sat - leftover chicken fajhitas
Sun - leftover roast beef slices with mini garlic and herb roast potatoes with veg and gravy/sauce of some kind

Pinot noir.....I got that book from DH for Christmas! Its where my nye lentils are coming from, and maybe something else.....its a lovely book, gentle and sensible.
