I know the butter method but how do you make cheese please?:)

its easier than making the butter:p
heat the buttermilk up in a heavy bottom pan to roughly 72 c
for about 20 mins stirring ocasionaly and it will split into curds and whey if it does not start splitting heat to about 80c when the liquid is clearish with the curds in strain through several layers of muslim in a seive leave for about an hour to get as much liquid out then add salt and herbs to taste..
you can add whole milk to the butter milk before heating supposed to be more creamy but i just wanted to use buttermilk as had a lot.. only so many scones the kids will eat0 -

Yeah. As OP says you can just use normal milk as well.
