I'd just write back with the bare minimum of information - such as a booking reference number and the contact number of the hotel so they have to waste their time checking it.
I agree with you, it's actually their problem and not yours. You've told them how they can verify you had authority from the principal so that should be that. I'd also be tempted to continually write back to them with the same letter if they say this is somehow not good enough.

... Or tell them if they need a hard copy of the booking confirmation they will need to send you a prepaid envelope. It's not an unreasonable request. Why should you be out of pocket even for the cost of a stamp?

It is free parking for Hotel guests though. They take my registration number when I check in. I stay at this hotel regularly and am in fact here now0

This may sound a little harsh but........
The easiest way to do this is to get the hotel to contact PE to confirm your stay and have them cancel it.
The next easiest is to get a copy of your hotel receipt and send it with a covering letter to PE and ask they cancel the charge - it's worked many times for many people. If you can't be @rsed with that (as you suggest above) then you'd better be @rsed to be putting in much greater effort to appeal to PE, then construct a POPLA appeal - far more effort, but for the same purpose.
Frankly trying to be too clever, like charging them for you or your company dealing with it is a futile exercise - they will have had endless people trying that approach; they will just plough on pursuing you and if you don't go through the formal processes, you will be issued with court papers, then you're definitely going to have to be @rsed in dealing with them, otherwise you're going to get a default CCJ against you.
PE are the most litigious of all the Parking Companies, they issue 1,000s of court papers each month.
As I said at the top of this post, sorry to sound a bit harsh, but you're at the 'easy' end of this process; the more you avoid dealing with things 'properly' you soon get to the 'hard' end - and none of us on here would want you to get there, because it will cause you far more grief and we will end up having to do far more in helping you dig yourself out of it.
Just make a phone call tomorrow, and if that doesn't work a quick letter with a copy of the receipt - job done.

I would be storming down and demanding to speak to the manager now, it's their problem, they have messed up, their scamming PPC have harassed you without cause.
The hotel should be jumping through hoops to cancel this ridiculous charge. Especially as you are a regular customer.0 -
There must be a procedure between the hotel and PE. This has broken down somewhere. Hotel should sort it out for you.
If they don't, then send evidence of your stay to PE yourself,.
Yes it may be a pain but easily solved with little effort letting you get on with your life.0
