A nice change to just plain boiled cabbage is to boil up some potatoes with the chopped cabbage. Dont put in too much water, then towards the end of cooking, chuck in a blob of butter, salt and pepper. Leave this to boil a bit more and mash. It really is delicious and this comes from someone who refused to eat cabbage!
I know there is a recipe about for beetroot choclate cake, and beetroot muffins. SOunds awful, but apparantly they are really nice!

Lettuce braised with peas (petit pois if you want to be posh) is a "recognised dish". I'm sure you'll find a recipe if you Google it, and yummily it usually includes butter. I have done it in the microwave - but I'm not fussy as long as I know what's in it and think that it'll do me good
And microwaving is, of course, very moneysaving in comparison to using the oven.
A winter/spring salad: Boiled beetroot (not too soft) chopped or sliced, seasoned and sprinkled sparingly wth Lidl cheapo balsamic vinegar - so much nicer than malt or other highly acidic vinegars. Have it with your lettuce and a potato salad, and some finely sliced white cabbage for crunch (crunch being the mot du temps)
All that from someone who hasn't had the heart for cooking for years :embarasse

Beetroot... yumm...! It's good in salads, you could use it with some of the cabbage in a coleslaw. My nan used to boil beetroot and serve it on toast with a cheese sauce. Alternatively you can make hor or cold borscht (vegetable soup), just look for a receipe you like the look of, there are loads on-line.Eat food. Not too much. Mostly plants - Michael Pollan

You can fry the cabbage in a little butter with some of the onions until soft, then serve as a side veg.
We eat this all the time, and it's lovely!
I agree with lesley1960 - jerusalem artichokes are the best veg in the world. I tried them on OH's friend who eats NO veg and he loved them. Again, roast like you would potatoes, put them in a soup, mash them with potatoes, mash them on their own. Yum!0 -
jeruselem artichokes
1. Soup - check out recipes for Palestine Soup (jeruselem)
2. Par boil 5-8 minutes and roast as per roast potatoes but they do quicker.
3. Chips - deep fried
4. Parboil and slice then saute.

Cabbage and beets keep as veg for weeks anyway.
beets - when you have the oven on anyway, bake them whole in the skins.
You can then quarter and eat as a veg with a little sour cream or youghurt, or vinegar.
or add a bit of feta type cheese to make more of a main course salad. They also go well with orange, but not cheese and orange.
Or slice or quarter and make pickled beets.

Home made coleslaw is SO much better than the stuff in the super market - try it.
Or gently fried and served as a side dish
or fry some strips of beef or pork and a little ginger and onion, then stir fry the cabbage, mix and add soy sauce or another Chinese sauce that you like. Serve with rice or noodlesIf you've have not made a mistake, you've made nothing0 -
jerusalem artichokes make the most lovely soup but watch out for the massive amount of wind that they produce. Enough to fill a hot air balloon0

I have done this before and got a boxof things like butternut squash and fennel that husband wouldnt ever eat - well he did in a casserole!!

i have had a box delivered today and i havent a clue as to how to use or get the most out of them. the ones in blue i have no idea at all on prep or cooking. the red ones i only know extreme basics. i also would like to know roughly how for a sitting
- 2x aubergine
- alfalfa sprouts
- 6 big courgettes
- bunch of radishs
- 2 what i think are lettuces- 1 green and 1 purple
- purple sprouting
- cauliflower
- baby carrots
- 2 kohl rabi
- green cabbage
- 2x fine green beans
- 2x purple kale
- 500g sprouts
- about 20 eggs
