  • tigerseye- have you looked at this website, i found it this evening, https://www.allotment.org.uk they have some healthy looking recipes on there! we are on our third week of local vegetable boxes, it has been great fun!

  • How about veggie curry? I often do this at the end of my veggie box week with all of the leftovers.

    Im having trouble with the curly kale, if anyone can think of something to do with that, other than feed to someones rabbit!!!im hoping its isnt going to taste like swiss chard we tried that last week, and didnt enjoy it at all! thinking maybe it could go into a fritatta??anyone ever done that before!

    Fry a sliced onion, add a tsp of chilli flakes (if you like it spicy, paprika if you don't), add shredded curly kale, stir-fry for a minute or two, add a tbsp of water and cook until all the water has evaporated. Stir through mashed potato. Yum !

    You could make vegetable tempura, veggie burgers, an nice stew, all sorts of things.

    Honestly, we use way more veg than that, and there are only two of us. :)

    Hello there, couldn't find an appropriate thread to add this to so apologies if in wrong place. I had an offer from Able & cole that if I spent £20 I could get a "free" fruit & veg box, soooo, thought what a good offer that would be if I could use what I have in and try and make that as much as possible last the week. Thought my delivery date covered the box with the stuff in I like but have got it wrong - that must be next weeks, so have got things I a) wouldn't have chosen and b) don't know what to do with. The fruit is all fine, potatoes onions no problem BUT we don't eat much lettuce - anything I can do with this other than in an obvious salad? I've also got a white cabbage which I only have ever boiled and had with a roast - any other suggestions? Finally what I am really at a loss with are the beetroot and jerusalem artichokes. If at all possible - know I'm being really cheeky but menu ideas that could be frozen would be great as not much of a saving if it goes off before I've used it. Many many thanks.

  • Not sure about the artichokes but white cabbage keeps for ages, you could make coleslaw with it or use it shredded in stir fries as well as your usual boiled. I think you can make beetroot soup (never tried it myself) or you could just boil it and pickle.

    jerusalem artichokes, have to be the best veg in the world , you can make soup , steam them , or roast them
