I am amazed that there are so many uses for it... seriously, I hadn't a clue what to do with it... the rice puddings have made me revise my thoughts on the fudge :-)

Yup.
I grew up in a tiny village quite close to Tunbridge Wells. Moved to Derbyshire in my twenties.
DH is also a Southerner (although we met up here) but he lived mostly in the Windsor area and had never heard of it. Because I went on about it so much, but never actually made it, he looked up the recipe and made it for me on my birthday a few years back. :happyhear The best thing was, it was too sweet for him.
