I too make a slow cooked rice pudding with evap.milk.Gorgeous and creamy.I put it on the night before and switch on just as I'm going to bed.in the morning I have a delicious smelling kitchen and a large bowl of creamy rice pud that will keep in the fridge for several days (or less if like me you enjoy it)Real old-fashioned comfort food for cold weather.0

I use it to make chocolate and caramel sauce to go with my profiteroles.
Choc sauce - put 100g chocolate, 100g evap. milk (weigh the liguid), small nob of butter and pinch of salt in a bowl above hot water and melt. Makes a lovely choc sauce that also freezes well. (sets like choc. spread when cools down so have in past used as cake topping)
With the left over evap. milk (about 70g if its a small can), put it in a saucepan with about 30g butter and 35g sugar (brown if you have it) Heat while stirring till sugar dissolved / butter melted then allow to bubble till thick and caramel colour. Don't know if this freezes, never had any left!0 -
My grandmother used to whip it up with almost-set jelly until it was frothy, then put it into the fridge to finish setting. When it set it was a bit like a mousse, and very yummy!0

M'husband drinks it neat as as an occasional treat.
A lot more occasional now the Type 2 has blossomed, but it's still much loved.0 -
I made a pumpkin pie the other day and that needed a can of evaporated milk in it. I suspect pumpkins will be even cheaper this week!!!

I use it in this, a DIY "Baileys".
ISLE OF ISLAY CREAM
Makes approx. 1 litre
INGREDIENTS
400g tin of condensed milk
170g tin of evaporated milk
300ml carton of single cream
250ml of Scotch whisky
4 teaspoons of coffee essence
METHOD
Pour the milk and cream into a 1 litre jug or bowl.
Add the whisky and coffee essence.
Stir together.
Pour into a clean 1 litre bottle.
ADDITIONS & ALTERNATIVES
Adjust the amount of coffee essence to taste.
The original recipe specified UHT long-life single cream, but this can now be difficult to find. Use normal single cream instead.
Don’t use your best single malt for this. Any cheap supermarket own-brand blend will do.
TIPS
Use the whisky to wash out the milk and cream containers, then add it to the bowl.
This will keep in the fridge. However, I don't know how long it will keep for: it’s never stayed around long enough to go off.
If you fold it in half, will an Audi A4 fit in a Citroen C5?
