Great! Just made a pot of this veggie lentil and carrot soup. It's pretty quick and very tasty.
2 onions, finely chopped
2 carrots, finely chopped
250g red lentils, washed
2 pints stock
Add onions and carrots to pot, let them sweat a bit. Then add lentils and 2 pints boiling water, for stock I usually throw in 1 veg knorr stock pot (these are my fave stock cube, expensive but worth it, and on specials in adsa at the mo) 1 veg knorr normal stock cube and VERY important 1 teaspoon marmite. I never use it for anything else but it does give super depth for a veggie lentil soup. Let it all simmer for about 30 mins.
This amount does me and the hubby about 3 days.

Todays casserole was lovely. I have a day off tomorrow so I will prepare some lunches for the next week or so.

I sometimes feel as though i am the only one coming to work with my tupperware, while everyone else pops to the supermarket and thinks nothing of spending £5! I dont get it!
Anyway, i have updated everyone, but can you all check and YELL at me if i have the numbers wrong please
have had extra hours at work, which is nice, but no time for lunch breaks!So havent had lunch till i get home at 3.30 :eek:

I work 5 days a week, but my work is not near anywhere to buy food. Except a grotty burger van, it's not difficult to steer clear of that, and we have a Snack-in-a-box box, full of crisps and choccies, but I don't even look at it. I eat the same thing practically every day - very boring I suppose but I started it when I was wanting to lose weight. Morning break is a yoghurt and a piece of fruit. Lunch is soup (usually home made) but sometimes a tin or a cup-a-soup, with or without 2 or 3 oatcakes, and another piece of fruit. I don't really have to think too much about it, so it's easy. :-)

I took fish pie to work yesterday, did I say that? ... And I've got chicken soup for today. That's this week done with and I have one fish pie and two chicken soups left in the freezer, so that's three days next week. I'll make cottage pie, or perhaps lasagne, for next week - haven't decided which but there was a cooking programme with Nigel Slater I caught a bit of on the telly last night and he was making lasagne, which looked very noishe indeed. Cottage pie and lasagne are really pretty much the same thing anyway, it's just that one has mashed potato and one has pasta. ... Anyone here make their own pasta? ...0
