November 2013 Grocery Challenge

    How did you manage to get that much from 500g?!
  • This is what I done....the basic mince recipe was courtesy of a cooking mag the rest was all my own.

    Started with

    500g Lamb mince
    1 medium/large onion
    1 400g tin chopped tomatoes
    1 lamb stock cube (or beef if using beef mince)

    Dice the onion as small as you like it and fry in some oil, add mince until nearly cooked through then add the stock cube and tinned tomatoes. Leave to simmer for 10 mins.

    This gives you a base mince to do whatever you like with.I havent seasoned the base mince as I am going to season when I make into meals.
    I am splitting the mixture for Shepards pie:

    1/2 base mince from above
    1 carrot diced
    1 stick celery diced
    1 clove garlic finely chopped
    2 tbsp red lentils
    1tsp salt
    1/2 tsp cracked pepper
    1tsp mixed herbs

    Add carrots and celery to some oil and start cooking after 5 mins add garlic and lentils. Cook for 2 more mins then add mince, salt, pepper and herbs and a little water. Let simmer until lentils are cooked and add water if needed.
    for the mash topping I simply boiled some potatoes and mashed with some milk and butter.

    Then with rest decided to make a bolognese sauce

    1 stick celery diced
    1 clove garlic finely chopped
    3 tbsp red lentils
    1tbsp tomato puree
    mushrooms (I added 3 large chesnut mushrooms sliced)
    1 tsp salt
    1/2 tsp cracked black pepper
    1 tsp smoked paprika
    1/2 tsp cinnamon
    1tsp italian herbs
    1 400g tin chopped tomatoes

    start cooking the celery and mushrooms then add garlic and lentils, add tomato puree. Allow to cook for couple of mins. Add mince and herbs then chopped tomatoes, using the tin add 1/2 tin of water. Allow to simmer to desired thickness.

    * I added lentils more for nutritional value than to bulk it out.
    * I would also add bacon to the bolognese but didn't have any today.

    mince stretching....looks very nice
    i have been to farmfoods and got some bacon and a few cleaning products also got some handwash from t3sco still need to do a shopping list for aldi as just a flying visit to the town this morning

    Hello! It is 8 November 2013 and I am still with this...REALLY gonna try this month and keep track!! Sitting at £53.40 at the moment for the month, which is good for me, but was well helped by lots of mr t vouchers in this week's big shop! Planning a shop on Saturday or Sunday to get stuff in for next week, so we will see how that goes. Thankfully have a fairly full freezer full mainly of mince based meals...so plan to buy 2 chicken and 1 salmon in the mr t 3 packs of meat for £10 to make some nice healthy type meals. Also planning on making 1 new thing each week from the hairy dieters book, so will have to have a looksie to see what to do next week...I've been eyeing up the individual chicken pies!! yum!

    Don't know if anyone uses the shopitize app but they are giving 50p cashback for McVities Jaffa cakes and A*da are currently selling them for 50p meaning they are free. Also 4 pack heinz BB £2.50 in A*da and app is giving £1.50 cashback and as they are more expensive than Mr T it should also give you a price promise voucher at the till.
    Small bottle of coke zero £1.15 at Mr T/a*da - £1.20 cashback
    The app is free to download.

    been to Mr T Finest evening so got pasta, blue cheese and wild mushrooms and dark chocolate:dance::dance: so do not need to buy any and i just had an email that i won a picnic hamper from Countrylife (was comp on facebook) it's coming on Wed :j (i know there is deffo cheese and chutneys need to wait and see what else) so excited
